@@janetlindsey456 Its been a long time since i have made these, but if you use 3lb of chuck that should make a lot of these. If i had to guess maybe somewhere around 15-20
So I cooked this recipe for my family and some friends this weekend, this is the most raved about thing I have ever cooked them they loved It, its going to become a regular dish at our house! Just wanted to let you know and thank you for putting it out there. If you haven't tried it I highly recommend you do it's delicious!!

As a Mexican we don't fry flour tortillas for flautas we typically use corn tortillas, traditionally for flautas.

I just made this for my family and holy cow it was a huge hit! Everyone insisted that I absolutely have to make it again. It was so delicious; the flavors are insane and crunch on the tacos was amazing! You definitely make it look easy, it took me almost 3 hours in total, but even still it was worth it.
Sam, "manual release" is when you manually open the valve. "natural release" is when you let the steam release slowly and naturally, without manual intervention.
I've been trying to explain this to my masseuse, but she still doesn't get it!

Sam, as a certified amateur Mexican chef, I give you two thumbs up for this! I would have added a jalapeno or serrano pepper into the crema, though. Great job!

Yeah, I make the same crema with either a jalapeno or serrano depending on whatever is fresher at the store. Really enhances everything!

The actual act of frying things is not so much the intimidating part of frying things at home it dealing with what's left.

We don't fry THAT often, but our family always saves the bottle it came in. When the oil is used and entirely cooled, funnel goes in the bottle, and oil is poured back into the bottle. Cap the bottle, toss with the trash. Some places accept the oil for recycling, if you're going to wind up with a lot of it
Keep the old oil bottle or any big bottle and buy a funnel and transfer the cold oil from the pan to the bottle. Really easy and not messy 🙂
Sam, Thank You! I have recently discovered you a couple of months ago. I have been an OK cook and just love to cook as a hobby. Taking some family recipes and making them myself has been what I have always done. I will say that your recipes while being so simple make them so complex with flavor profile. I think my most favorite part of your videos is that you tell us multiple ways to cook what your cooking. If you can't cook on the grill, cook in the oven like this, etc. Personally I love seeing how cracking eggs give you such a hard time. Makes me feel like I'm not the only one lol. Again thank you for your videos which bring confidence levels up for even the most basic cooks out there!
Another happy cook, great recipe, the flautas/giant taquitos came out perfectly and were sooo good. My guests loved them. I bought an Instant Pot for 55 bucks from Macys just to try this, great price on the Pot. I also bought some heirloom beans from Rancho Gordo in Napa to make some scratch mexican beans. And used it to make the mexican rice as well. Tried a lot of your recipes and so far I am batting 1000 with my guests.
Just made this for dinner tonight. And I have to say, AMAZING! Awesome recipe Sam! Appreciate it! The meat was so tender and the flavors of the spices were phenomenal. The chipotle chili powder really added some pop to the flavor of the meat. The family also loved it! Everything was simple and easy to make. Tasted delicious. All done in an Instapot for the most part. Super easy for anyone to do.
This morning my wife told me she wanted tacos for dinner. This is what she’s getting.

I’m from Oaxaca and we call them “tacos dorados”. But just about everyone else I know refers to them as “flautas”. Regardless, food is good. I appreciate Sam’s take on the food.

Not done this entire recipe today but I cooked the beef in the pressure cooker . Served it with your recipe for garlic mashed potatoes. Was class. Loving all your recipes I’ve done. Keep em coming
I could recommend a spicy salsa we use here in Ensenada which is made solely of dried chiles and a bit of tomato: the chiles are called "pico de pájaro" and we often ask for the more piquant variety, you boil them for 5 min, let them rest for another 10 min and puree them with just a bit of the water, a bit of olive oil, a bit of white vinegar or apple vinegar and salt. Appart you boil a three big tomatoes as red and ripe as possible (optional: broil them or char them) and puree them, add a bit of the chile sauce to make it as piquant as you want to. The chile sauce can be used as is.

This recipe was absolutely delicious!!! It was the first one of yours that we have tried. I made soft tacos with it instead of the flautas....so yummy!! When its made with flour tortillas its called Flautas. Taquitos is corn tortilla FYI.😍
In Chihuahua taquitos are the very small corn tortillas served as tacos.. you know, the U shape. Almost all restaurants and street vendors (taqueros) use the small corn tortillas.. The normal sized ones are for grocery store sales (home use).

Pretty sure you got natural release and manual release confused... "Natural release" is what you described as the preferred way . Manual release is when YOU manually release the pressure..... other than that... Great video!!!!

In Mexico taquitos are the very small corn tortillas, served as regular tacos. Flautas are both rolled, corn and flour. They are called flautas (flutes) because that's what they look like 😉 that's in Mexico though, USA names things differently however.
