Super Moist Banana Bread 🍌 & Easy Blender Banana Oatmeal Muffins | What to do with Overripe Bananas

  • Cook with me as I save these brown bananas from my mom's compost pile! You can also freeze bananas for smoothies, to save for baking items later, or to make doggie ice cream, or dairy free "nice cream. " Tell me in the comments what do you do with your overripe bananas? 🍌
    Banana Bread:
    2 cup flour
    1 tsp baking soda
    1 tsp baking soda
    Πtsp salt
    1 cup brown sugar
    3 tsp cinnamon
    4 mashed banana
    2 eggs
    œ cup applesauce (or oil)
    3 tsp vanilla
    Preheat oven to 350. Grease pan. Mix all dry ingredients. In a separate bowl mix all wet ingredients. Then mix them together.
    Bake at 350 degrees for 45 - 50 min.
    Frosting
    2 oz cream cheese, softened
    2 tbs butter, softened
    1 cup powdered sugar
    Πtsp vanilla
    1-2 tbs milk
    Beat together the cream cheese and butter. Add the powdered sugar, vanilla and milk. Mix with a spatula then continue with mixer. Add more milk as needed.
    Blender Banana Oatmeal Muffins
    2 cups oats
    2 bananas
    2 eggs
    Πcup maple syrup
    1 tsp baking soda
    Chocolate chips (optional)
    Blend the oats. Add the rest of the ingredients and blend all together. Add in any topping (I crushed up a chocolate bar because I didn’t have any chocolate chips) Stir and add to greased muffin pan. Bake at 350 for 15-20 minutes or until a toothpick comes out clean after inserted.

    Mashed bananas- dip for pretzels, smoothies, peanut butter/banana sandwich- anywhere you would use a fruit spread really. I used to mash them and then freeze. If not to mushy, cut into chips. Chips are great dipped in ice cream fudge/chocolate sauce and it’s lower calorie then you think. A great dessert! Off topic but grapes are $.99 a lb. freeze them for a tasty summer treat. Since they are frozen you eat them slower, savoring taste and texture.

    Skin them, freeze in ziploc bags, blend the blend some more, add chocolate chips, eat like ice cream, they dont have the exact texture of ice cream, but they are not slimy either....just whip well, and refreeze for a bit if needed! Yummmm

    I make banana bread just about every week...purposely buy too many bananas. We used to just freeze them for smoothies or nice cream though!

    Oh my god I’m so sorry but is that rust/ corrosion on your baking dish ?

      No it is not. That is a pampered chef stoneware loaf pan. The more you use it the darker it gets. It’s beneficial since the dark “seasoning” helps food release easily.
