  • Many people have requested more videos like this so I tried it again!! I spent $30 to make all my food for the week (for me and my husband) and only added oil, butter and a few seasonings that weren’t included in the $30 budget.

    I think you do well with your challenges. You have also taken criticism and suggestions and improved your menus. I know you prepare the food with only ingredients purchased with your $30.00 for that week. Suggestion- I will use your banana filled tortillas as the example. 'preparing banana filled tortillas' explained your preparation exactly as you did. Then mention 'if you have peanut butter in your pantry from a previous purchase, you can add that to bump up the flavor and protein'. This way you are staying true to the challenge and offering suggestions if the viewers has a few things left that can be used without going over their budget. Keep it up your doing great. I have recommended you to my son and his girlfriend as they are struggling.

      It’s amazing to me that this is less than $30. With the extra food it could be 2 adults & 1 child or easily 1 adult and 2 kids. The proportions were good. A few could have used a veggie. A little more fruit. I say that because I don’t consider most yogurt to have real, or enough real fruit to count as a fruit. Maybe get dry beans vs canned and add some apples. I feel like I’m picking. The variety of meals would make most families think they have a big budget instead of just $30.

    Cut only the green part of the scallions up. Leave the white part and roots. Plant those in a pot at a kitchen window and they will continue to grow and give free food. Thus making your $30 easier to accomplish next time and give you more variation!

    These are great! Everything looked delicious! One thing I would suggest is after you removed the chicken from the bones is to make chicken broth in the instant pot. You could then use it to cook the rice or make soup. Adds a lot of flavor. Thank you for sharing your ideas 😊

      Yes! I need to do that more often. Homemade chicken broth is so much better than what you buy at the store.

      @@quetta561 I usually just use my scraps of veggies (not the leafy green stuff ~ you don’t want it coming out bitter) & keep in a freezer bag in the freezer, once I have meat bones (chicken, turkey, beef, etc) I use both the odds & ends of veggies & some of the meat bones & put it in my crockpot for about 12-20 hours. I rarely season it as I want to be able to season whatever I’m making not the broth I’m putting in. Helps me to control my sodium intake. You can also put apple cider vinegar (maybe a 1/4 cup?) to help get all the nutrients out of the bones you are using. But just fill the crockpot with bones, veggies, & fill water to the top. I usually start a batch at night that way a big chunk of it happens while I’m sleeping.

      @@quetta561 adding to lifebeyondthesalary's excellent instructions. After making your bone broth, if you find it's rather weak, you can always add some soup base / boullion to it.
      It still gives you a better flavor than boullion alone.

    Really impressed by the variety of meals you've created, I think a lot of people could benefit from watching these! An idea for a future video could be a budget challenge - you vs your husband, would be interesting to see what you both would choose and make haha

    When you are using potatoes, you can just wash them really well and leave the skins on rather than peeling them or removing the skin after it is cooked. There is quite a bit of nutrition in and directly under the skins, and there is a bit more fiber there as well which helps you stay full longer.

    Love the variety on this challenge. You can use the slicer on your flat grater to thinly cut that potato for chips. Keep up the challenges. Great job!

    I think the chicken and rice dish would have been great with some of the veggies mixed into it too.
    My favorite of the meals that you put together was probably the rice and veggies at the end.
    You did a good job of providing a bit of variety.

    Very nicely done! Suggestion: on your smaller meal nights, use a salad plate instead of your 10". The food will fill the plate (we eat with our eyes) and give a sense of abundance. 👍

    $1 for a spatula at the Dollar Tree. I used to buy all my cooking utensils and baking tins at chef stores and/or Walmart. However, the last few items I have bought...I got at the Dollar Tree. They have been just as good as the ones I have purchased on Amazon, Target, Walmart and/or chef stores! Thank you for posting this. I really like your videos.

    These are great ideas for sure. If you want to cut out some of the oil for your potatoes you can try using your silicon baking mat on a cookie sheet with the seasoned potato slices or wedges at 425 until they are the crispy you like them to be.

    Hashbrown tip... cook your potatoes in the instant pot and cool. Shred the cooled, cooked potatoes. They are the best hashbrowns ever! You can cube or slice them as well. This is a favorite of ours with leftover baked potatoes.

    You did a splendid job, sis! I would make just about everything you have here. The variety is awesome. If you forfeit the green onions for a head of cabbage, you can prepare a pot of colcannon with just cabbage, a couple of potatoes, and a little sausage. So filling and flavorful, and hits the table in about 25 minutes.

    Very creative idea. It has been mentioned in an earlier comment, but using the chicken bones to make a broth can add so much flavor. Use it when cooking rice or pasta, add some to mashed potatoes, or pretty much anything savory that you add liquid to.

    I hope you kept all the trimmings from the chicken for making broth at a future date. Also put a Mandoline slicer on your wish list as that would be much better to slice the potatoes and safer.

    Those BBQ cheese chicken sandwiches looked great!
    One thing I remember when I make chicken thighs is to keep the bones and boil them with whatever vegetable scraps I have (even the root end of the green onions would work) and you get a lovely broth from that you can use for even more dishes!

      As you are chopping veggies put all scraps, peelings and ends into a ziplock freezer bag to accumulate as you go. Same with a separate bag for bones and skin (raw or cooked). Then when you want to make stock you will have most or all of what you need in the couple of bags. They can go straight from the freezer into your Instant Pot and you will have a nutritious stock. You can also save your corn cobs to make stock.
      Great job with the food challenge, I appreciate the variety of meals as I get in a slump trying to come up with ideas.

    You are really smart and so creative with your grocery challenges - Im so impressed with you, especially since youre so young. You really got a lot out of the food you bought and made great choices with what to buy and how to use it. Next time you do your chicken, go ahead and poach it and save the broth and refrigerate it overnight and then skim the fat off. That chicken fat is fantastic. Your thin potato slices would have been heavenly cooked in the chicken fat and it also makes great cornbread, biscuits and even makes a great addition to homemade tortillas. Keep up the great work!!!

    The $30 budget more attainable. Yes home cook save a lot. Fried egg on rice with soy sauce & hit sauce is already a meal to me. Also Made Hainan chicken rice & egg fried witg frozen mix vege rice for dinner. For lunch just Bolognese & carbona pasta just with burger meat stirfry in canned bolognese sauce & chicken loaf stirfry in canned carbonara sauce . Also having breakfast with toasted bread with canned mushroom soup plus canned mushroom & using half of the bread as pizza base using leftover bolognese sauce & frozen corn, sausages with cheese on top.

    You can take bones from the chicken and make a both or stock and make soup or save it for some other time in the freezer

    Wow! I live in Maine and those prices are half of what I would pay even in Walmart! I had no idea that Maine had such inflated food prices compared to other states. Unbelievable! Food is our largest budget item.

    Much better options at Aldi! I see more fruit and veg. Is there a reason why you bought the instant oatmeal? I would think a container of plain quick oats would be cheaper?

      The instant was cheaper. There was way less oats in the packets so the container is definitely a better deal per oz but I just didn’t have the extra in my budget to get the container.

    I have noticed that on a lot of these budget challenges that the appliances used are likely out of reach in a budget that cannot afford basic groceries. For example an insta-pot isn't a cheap kitchen item. It might be nice to offer alternative cooking methods for folks that are working with the bare minimum tools

      I have a one pot meals video! But you are so right. I just use the instant pot for ease but you can easily just bake the items as well, I should mention that in my videos 😊

    I wish you would have showed all the food you had left over from your haul after you ate all week. I know you had rice for sure but I bet you had more

      Yes! I should have done that. You’re right. I definitely had a lot of rice, bbq sauce, ranch, hot sauce, a little bit of pasta, the green onions, and a couple eggs.

    I just found your channel a few days ago. I love it! You do such a good job making creative things that look good, and using the ingredients in multiple meals. I would love a video on how you meal plan. I also only got Aldi about 3 years ago. I haven't checked it out much since they open later than other stores, but I will definitely have to. I'm in New England and groceries here can be very expensive. I'm definitely going to try the banana / tortilla wrap.

      Oh! If you like peanut butter add that on the banana wrap! I usually do but couldn’t quite get the PB in my $30 budget. But I make them all the time with peanut butter. I even freeze them and they are an awesome quick breakfast or snack 😊

    Are used to shop at save a lot but now I shop at Aldi They have better product I believe then save a lot does so I quit shopping there once they built an Aldi here in Tulsa

    We had the first Aldi open up near us a few months ago...I wasn’t that impressed 🤷🏼‍♀️ Maybe some are better than others?

      Aldi requires a few visits before you like it....I had the same underwhelming response the first 2-3 times but after you figure out your faves - you'll be hooked!

    Everyone says aldi is cheaper but idk HOW.... every time i shop aldi I always end up like 200 over budget at the end of the month. But i dont really eat processed food so maybe thats why
