I think you missed the key ingredient in Phad Thai, which is "Tamarind". It is an ingredient that makes it sweet and sour, and the color would not be pale. It would be brown-orange ish. Normally, if you add tamarind, you can leave out the like and put it as doc oration just in case someone likes it more sour. :)

If you can find a tamarind juice. Put it in the pan instead of lime juice. It will be more like a original pad thai in Thailand. I never cook it with lime juice before but it is a good option when i don't have tamarind juice. i'll try to cook it with the lime juice. I really like your video. you make everything looks very easy to cook.

have you tried palm sugar rather than brown sugar? it's a staple here in thailand, used in so many dishes, and it has a really interesting flavour to it! :D
I am wondering what I could use instead of prawns? Not keen on shellfish!! I know, probably not a genuine pad thai without prawns,right? Just looks so delicious!! xx
I just finished watching this video. I'm a bit wonder in your recipe for this dish. Normally, Pad Thai come with tamarind sauce, but I see you make the sauce by using new different ingredient. The pad thai recipe I usually use is pretty different from this one. Yours looks pretty damn good so I might have to experiment a somewhat and use bits of your recipe!
Hi Donal! I'm a new subscriber and your chocolate recipes leave me drooling everytime! I was hoping you could do your take on a dish I love which is Nasi Lemak! It's a malaysian dish and we have it here in malaysia during breakfast/dinner(if you're hardcore like me :p jokes) haha! It's rice cooked with coconut milk and pandan leaf. Usually served with sambal,eggs and w/ fried chicken(or any other dish you like). hope you reply and take the idea into consideration! Cheers! x

Also, deep fried tofu cubes and crushed peanuts for garnishing and crunchiness! And also fresh stalks of green onions and cabbage!

Looks great! Just a heads up, it's normally pronounced as p-ah-d thai in Singapore! Not sure about how it really is pronounced though!
