Rescued a non-fermenting lager and tested Huell Melon as a dry hop.

  • When yeast dies, and your beer doesn't ferment, quick action is needed.
    I brewed a failed German Pils, which turned into a blonde ale, dry hopped with Huell Melon hops.
    This is the result of emergency beer recovery...

    Thanks for the video. We really do learn more from experiences that don’t go to plan… I appreciate you taking us through how this beer played out. Cheers from NZ.

    That Andecher Lager X is my favorite lager strain. A real shame that it's a "Seasonal" yeast only from every yeast company that carries it.
    I THINK to get the green mellon flavor out of the Huell Melon it has to be used in the kettle vs dry hop, and that some of that green, ripe mellon taste comes from biotransformation during fermentation. One of the top 10 brewers of lagers in the US, pFreim Brewing, uses a bit of Huell Melon in their Helles that they just call "Lager" and they've managed to really consistently bring that melon flavor out.
    It's definitely a German hop so it's still quite subtle, but definitely present in that beer.

      Yeah the Lager X is seasonal in many places here too. I freeze my yeast stocks though, so I just make sure if I think I'll run out, to get some while it's in (or spin up a starter to split).
      Hmmm, Huell Melon...... I think I've given in on that hops. I just can't get the taste out of it, without getting a whole load of grassy type flavours.
      I've done yet another beer with it, where I put it all in various stages of the mash and the boil. I figured I'd try and pack it in everywhere (knowing full well that I'd get more grass flavour) with the idea that if I could get a real melon flavour, then I'd narrow down where in the process it was best drawn from..... The result?... Nothing but grass. Virtually no melon. So the best results actually came from the dry hop for me. Still not enough to choose to use it again.
      I've got footage of that beer that I'm still undecided whether I'll put the time in to edit and release. Maybe...

    Strange that the German lager X didn't kick off, I use that yeast for my lagers and have repitched a couple of times. I made a starter with some slurry a few weeks ago and it was fermenting a couple of hours later.

    • @brewandbuild
      @brewandbuild  Před 8 měsíci

      Yeah, I really don't know what happened. Like you, I regularly repitch with Lager X, and I've even racked onto a single yeast cake three times all without any issues. This time... dead. It's got me stumped.

    Good video. Your beers are are always super clear, any tips please?

    • @brewandbuild
      @brewandbuild  Před 9 měsíci

      Cheers.
      I use whirlfloc in the boil. Once fermentation is finished, and it get transferred to the unitank, I chill to 3 degrees c. Then I fine with gelatin, followed by Kieselsol 24 hours later. Generally, that schedule will clear most beer, but not always. Some others that I know will not clear with finings, I put into a horizontal clearing tank (converted keg) for a month or so.
      Then there are some beers that won't ever clear...... hate those ones.....

      @@brewandbuild Thanks I’ll try that with beers that should be clear. Do you brew hazy NEPAs or is that a style that you avoid because it’s intentionally not clear?

    • @brewandbuild
      @brewandbuild  Před 9 měsíci

      😁 lol. I'm quite happy with styles that should be hazy,, if nothing else, they give me less work to do in the clearing department.

      @@brewandbuild Thanks. I still enjoy most styles of beer as long as they are worth drinking. I have found Murphy and Son in Nottingham a great help on many aspects of brewing, especially on cleaning and clarity conditioning.

    huell melon and motueka hops are very hard to get right. ive tried both in 2 different batches and i must say im not a fan at all . been curious though about mandarina bavaria hops. do you know a lager recipe with these hops?

    • @brewandbuild
      @brewandbuild  Před 8 měsíci

      I've used Mandarina Bavaria a few times in different beers. Funnily enough, my Honey Lager is dry hopped with it (link below if you're interested)
      czcams.com/video/snSmw6J8y5Q/video.html
      The hops was a bit disappointing to be honest. The light Mandarin taste was present, but way way to subtle for what I wanted. My next trial with these hops will be to dry hop warm in primary for 7 days to see if I can draw out more flavour.
      If that fails, then I think whirlpool might be the next bet. After that, if I can't get the flavour, I'll give in on Huell and M.B 😒
