Looks like a good stones but my personal preferences - wet stones and hone tools with leather strop . Diamond ones are giving you that "teeth etching" sounds :)))))

I have exact same 8 in stone. Some scratches happened to form on the fine side. Anyway of fixing or repairing them?
@@acmhfmggru I replaced them with DMT plates. Using lapping fluid to lubricate them. They say they are the best plates to get.

What the average number of passes do you need to get to the knife sharpen like yours? I did mine so many times, but I surely don't get to the sharpness you got. Any tips are welcome.
It would depend on how bad the cutting edge is. You should start sharpening in one direction till you create a burr on the opposite side, then go other way and move the burr to another side. After you can make a 1 pass on each side, give about 10-15 strikes to each side and move to higher grit. On higher grit give another 10 strikes each way and should be good. Good luck!

Use the angle guide that comes with the plate. If you google the knife , most likely they will mention the angle. Also, use lighter pressure on the fine side. I like to equate it to stropping a blade on leather. Just the weight of knife and away from the edge. Always trying to maintain the angle. (That’s one of the tricks). Hope that helps. I say that because that was my problem!

Yes I am still using them, you can see them in most of my knife videos. They still work great!
what about ceramic knives?
Not sure that you could sharpen them at all. I don't have any on my kitchen
Have you tried dmt? If you have, how are they holding up compare to dmt?

I’m not a professional by any means, but in my experience oil stones and diamond stones work well with western knives but might not work as well on Japanese steel..being that most Japanese steel is so hard that oil stones or diamond will leave micro chips on the edge..
I own both sharpal small stone and the 181N as well as Japanese whetstones and Oil stones..I use the rough side of the Sharpal to set an edge and strop on the fine..works really great! Sets the edge on matchetes and sickles really fast.
One quick note: For fine Japanese knives I would not recommend diamond or oil stones..in my experience they leave micro chips and scratches..I only use Japanese water stones for Japanese knives( that’s my preference).. I avoid using honing rods unless stated it’s made for Japanese knives.
Would I buy another Sharpal stone? Definitely! I especially like the 181N because it’s so handy on the farm and I can get a near razor sharp edge quickly..plus the price..
Hint: I always wipe down my diamond plates with laping oil to clean out the metal residue and prevent rust..
