a short cut trick i found for snap step when rotate, scale and moving is to hold W/E/R, then hold v at the same time and then left mouse click and it will present you with a pie menu. for moving its snap then > discrete move. for rotate its discrete rotate. for scale its snap scale.

do you discuss anything about non-manifold shape issues? that frustrates my students quite a lot. i show them cleanup, and what non-manifold means and help them to do good habits which usually reduces the amount of non-manifold shapes, but they still will happen no matter what experience level.

it seems they updated the Extrude algorithm in maya 2020 so when adding thickness to whole model should be more pedictable. pls do a video testing it

Me neither. It was supposed to select the faces around a selected vert, but it didn't do anything for me either.

Yes, it will most likely print but if its on a curved surface (which most pinching) you most can always sand it down.
