    Tip- The flavor of Quinoa is greatly improved by taking just a minute to toast it in a pan until the quinoa just starts turn color slightly and starts to make popping sounds. You must constantly keep it moving while toasting. Take off the heat immediately and cook as normal. This brings our a wonderful nutty flavor in the quinoa and to me is always worth the small amount of time.

      Good tip! You could also try to cook it in vegetable broth - that way the quinoa itself does not taste as boring :)

      The same goes for couscous and buckwheat - beware the buckwheat will pop if left too long!

      Also, tri-colour quinoa has more taste than just white quinoa. Make sure you use boiling water/broth after toasting or it will spit all over the place!

    I am here to help with the quinoa woes. My credentials: having a Peruvian mamá ;) First off: the package always give the wrong water to quinoa ratio which is guaranteed to give you mushy soggy quinoa. You want more like a 1.5-1.75 cup water to 1 cup quinoa ratio. Second: toast that quinoa with some oil in the pot before cooking it. Let it get all toasty smelling. The bonus to doing this is that when you pour in the water it goes straight to a boil and you just pop on the lid, turn the temp up until you hear it boiling and then reduce to simmer for 15-20min. Third: use a cast iron pot. I never could replicate the quinoa of my childhood until I was recently gifted a cast iron Dutch oven by my mamá. Now when I take the lid off it is fluffy and the kernals are popped and curly like they should be. Fourth: take the pot off the heat, I like to sprinkle a bit of lemon juice in and give it a stir, put the lid back on and let it sit for 5 min. It will be just perfect when you take the lid off again. I guarantee you will grow to love quinoa if you can cook it properly!

    Nisha, your recipes are helping me pull myself out of depression. When my mental health suffers, I stop cooking for myself. I live off of packaged foods and delivery, feeling worse about myself each time. I recently started feeling better and started going to the gym again. My next step was learning new easy and nutritious recipes, and this video helped me make the first new dish in almost a year. Thank you so much! I know I’m going to try another one this week.

      Keep up the good work ❤ You can do this. Going to the gym was a great way to start getting out of your depression. I exercise Mon- Friday using my FitOn app at home to beat my depression. You eating vegan & exercising is doing more than what the majority of ppl are doing so keep going !! You're awesome 😊

      I go through the same. I’m in my “awake” phase (it’s not complete dark around me at the moment) off my depression and I’m cooking for myself again. I hope we can continue making many meals for ourselves ❤😋

    Instead of whole-wheat pasta, I found edamame, lentil or black bean pasta because I'm gluten free, and it has 20g protein per serving. It has a slightly more chewy texture than a regular pasta, but it's really good! It makes any pasta dish much higher protein compared to wheat, corn, or rice noodles.

    All the recipes look great! For the pasta it might be helpful in this recipe to reserve some of the pasta water for the sauce as the starch in it will help with the creaminess. For the quinoa toasting it in olive oil will help improve the flavor and prevent it from clumping together.

    Definitely want to try the edamame toast! Not sure if anyone mentioned this but lentil, chickpea, and pea pastas have more protein than regular pasta, in case folks want to up their protein in pasta dishes. The only downside is the texture of the noodles is usually a bit different (but ZenB spaghetti is pretty good).

      Actually sometimes its just a marketing stunt, regular pasta has around 15% protein, chickpea and lentil pasta has often something similar so check the nutrition stats. Also they just taste bad imo haha

      @@cornicheck500 I compared the nutrition facts on the box and online, and 1 serving of bean pasta has about 13g of protein. That's quite high for pasta and definitely higher than whole wheat pasta for similar calories. Plus I think the video only mentioned like 7g of protein for the whole wheat pasta. And other people may not like it but I love eating the bean pastas. I mostly eat bean pasta now. I only recommend things I would do myself!

      This! I use an edamame pasta which is 42% protein and 23% fibre per 100g. Much much better than the plain pastas and honestly really tasty!
      I’m next going to look into making my own hemp flour pasta, which is a whopping 50% protein and 18% fibre! Haven’t tried it before so I can’t say anything on that ones taste. They’re quite equal though as you’re only trading protein for fibre!

    these are amazing! i’ve been making your recipes for a long time and recently have been in the gym and trying to hit 30+ grams of protein per meal. i love how these are so well thought out and put together and proves that i don’t have to eat dry bland food just to build muscle. please make more of these!

    Another quinoa tip - if you miss the starchiness of rice, adding a spoonful or two of rice into the ricecooker with quinoa ( I use a 1:2 ratio). Also like rice- adding ginger slice/mustard seed/other flavorings is good
    Also replace wheat pasta w chickpea/lupin/ other protein pastas or noodles with buckwheat noodles

    The edamame avocado mash was phenomenal. Use half the soy (or tamari) at first to see if you like the salt level. I used one tablespoon of tamari and found it to be pretty salty.

    I absolutely adore how we can tell from your demeanor that the quinoa dish was not your shtick.     Great recipes! Thank you! This is how I sometimes make quinoa when I have time; sauté some shallots and red pepper in the pot first. Sometimes, I add turmeric and garlic too. Then add the quinoa and sauté a little bit. Add vegetable broth instead of water and bring to boil and then lower the heat until cooked. It’s very tasty! I love your videos!

    I really feel your workflow during preparation of the 2nd recipe: Add an ingredient to the sauce, stop to do something else, add the next one and so on - somehow my cooking always ends with this phase where you have to do x steps simultaneously as well 😀

    I was looking for a fast and easy breakfast to take to work. I saw the video on your smashed edamame toast. It honestly didn't look very good to me. I couldn't imagine those ingredients melding into something delicious. I made the smashed part and thought I was right but being a true believer in your cooking abilities, I went ahead and put it together with the sauerkraut and hemp seeds. Wow!     Thank you so much for these delicious recipes that are also quick and easy to make! Tonight I made your second recipe, the yummy noodles and broccoli with tofu - I used buckwheat soba, added extra tahini and almond butter, topped it off with lime juice and sesame seeds. Big hit and a recipe with " good bones" ( easy to substitute veggies or noodles). Your sauce is my favorite ! I also love your energy and you inspire me to cook❤❤❤

    I've always been on the fence with quinoa also, but I figured out a perfect formula and cooking method that even after it's it's it's still great! I rinse the quinoa and cook it with equal parts water in the instant pot for one minute and let it go down naturally. Works like a dream

    i make a very similar recipe to the pasta one she showed and i love to add lightly pan-roasted chickpeas to mine! its got protein and carbs and is just such a yummy addition!

    I make quinoa like a pilaf kind of. I sauté a bunch of different veggies (onions garlic zucchini mushrooms bell peppers) then toss in the dry quinoa and toss it around with the veggies for a minute or two to let it toast and take on the flavor of the veggies, then I use vegetable stock instead of water, bring to a boil, then cover and simmer for 20 minutes. Remove from heat. Then fluff and get all the veggies and quinoa well incorporated.

    I needed this! I don't want to get ripped, but I have a disease that means I don't absorb protein properly, and doctors are FOREVER trying to get me to eat meat. I'd rather just be sick, frankly. So this helps so much!

    I like quinoa either flavored by a nice salad dressing (I sometimes use it instead of grains or half by half with grains in tabbouleh to get some proteins in there) or baked with wild mushrooms, so the quinoa is not so soggy. There is this traditional Czech Christmas dish for poor people called "Černý Kuba" (Black Jacob; the name was given to it because a black mushroom, black chanterelle or black trumpet was traditionally used). It's naturally meat-less, and the only animal product used was lard, which can be easily switched for some vegetable oil or preferably vegan butter. It's prepared with dried porcini and other forest mushrooms including those "trumpets of death" as the French call the black trumpets, some grains (traditionally barley groats), onions, garlic, and a bit of spices. You can use some fresh white mushrooms as well, but I would definitely mix them with at least a little bit of dried forest mushrooms, otherwise the flavor just won't be there. The preparation is simple: you soak and cook the grains (I use anything, including quinoa, but also millet or buckwheat or brown rice. It's definitely not traditional, but if I am not using quinoa and want some proteins in there, I mix in some lentils as well), fry diced onions on some fat until slightly brown, then add dried wild mushrooms that you soaked in cold water, ideally a day before cooking (or fresh mushrooms) and stew it together, add finelly chopped garlic spices (In Czech cuisine, it's traditionally marjory, pepper and caraway, but I guess herbs like thyme and a bit of cayene would work just as well), and in the end mix with the boiled and drained grains. For better taste, it's good to stew it on the pen with the other ingredients for a while. Then you put it all to an oven-safe dish coated with fat and bake on 180 °C for 20 - 30 minutes and it's done. With good forest mushrooms, this is definitely a very tasty dish (and for us who are mushroom hunting by ourselves, it is also quite cheap - just grains, fat and spices).

    Nisha! Rinsing the quinoa gets rid of the saponin which can cause stomach discomfort. Also, once I started cooking quinoa in my instant pot - 2 minutes high pressure and 10 minutes natural release- I always have fluffy quinoa. I toss in a bay leaf and a bit of furikake to season it. Never boring!

    Have you ever worked with lupini beans? Technically legumes, they are one of the most protien dense foods out there and contain all essential amino acids. They can be pretty difficult to prepare tho from dry, so you mostly see them pickled in stores

    If I try the Edamame spread, I will try it with green garden peas instead of Avocado. Just because Avocado is less accessible where I live. Not the same, but probably also very delicious. As a bonus, this should even increase the amount of protein in this meal (37 instead of 31 gramms for two servings).
