Hot and Fast Brisket on Weber Smokey Mountain

- Today I made a Hot and Fast Brisket on my Weber Smokey Mountain. If you could smell a video, this would be one you want to smell! I feel like I always smell like BBQ smoke... It was SO tender and flavorful, you must try it at your house! Super quick and easy to make and even easier to eat! I love BRISKET.
You can do this on any kind of smoker that you like. I used my Weber Smokey Mountain and it worked fantastic. Try it on a smoker that you have.
Recipe:
• 1 - 10lb prime brisket, (a huge brisket wouldn't fit on my WSM) - my personal favorite is prime.
• Your favorite rub - I used a 50/50 mix of corse pepper and kosher salt with 1tbsp of my fav BBQ rub.
• Cooked at 300 unwrapped for 3.5 hours.
• Wrapped for 1.5 hours in foil (double wrap in 2 layers of foil)
• Let rest for a little while...if you can :) ha.
• EAT!!!!
Total of 5 hour cook time!

U should put a chunk of wood under the brisket positioned so that liquid will run off. That will stop the pooling
Looks good. But doesn't the bark get all soggy after being wrapped ?
