    Looks excellent Jim, Once this lockdown has lifted i'm planning a family get together and brisket hot and fast is on the menu.

      Sounds great! The good thing about brisket is it goes a long way.... and this method is so much easier especially in terms of time.

    Hello Jim, I just happened upon your channel.
    Very nice for a first video. I have the 22 inch WSM myself and enjoy grilling and smoking on it.
    Never done the hot and fast but I need to give it a try. I’ve seen many CZcams cookers doing it.
    Like your step-by-step concise instructional manner of this cook. I learned some new techniques that I can employ into my cooking
    That brisket looks awesome my friend!

    Great video. Just venturing into the world of smoking and it's nice to see some non Americans showing us how it's done. Where are you ordering your meats from? Online butchers or somewhere local to you?

      These came from Hixsons in London. Ordered online and delivered within 3 days

    Very good video look forward to more in the future. Where would you source brisket in Ireland and what are the likely difference. Don’t think they’re cornfed here.

      Hi Shay, No most beef here in Ireland is grass fed. your local butcher should be able to get you a full brisket they'll just need time to source it. I know McAtamneys Butchers & Hannan Meats can get them.

      It was an old butchers block that had been laying in a guys barn for years. I bought it from him and reconditioned it.

      This one was ordered in from a company in London called Hixson. Its hard to get decent brisket here.
