Good job getting that vent fan. Need to keep the smoke and metal fumes out of your lungs. Should have got a shot outside showing the smoke blowing out. Another good review.
I have exactly the same table. My "smoke free"solution was to board up the gap between the table frame and the water table on 3 sides then fit a 6" duct to the 4th side connected to a 1 1/2 HP 3000 RPM centrifugal fan. This also extracts through a 4" duct which is portable so I can fit it to the torch mounting to catch spurious fumes created above the workpiece. I fill gaps between the material being cut and the table with fireproof matting. This effectively seals the table and forces all extraction below the workpiece. I appreciate it's difficult to visualise from words alone, you need a couple of photos.
I didn't realize our shed was concrete panel construction, that makes cutting a hole in it more challenging for sure! Definitely makes a difference in the air quality. We mechanics inhale enough crap in our day jobs we don't need more at home having fun.
It looks like you have a water table under there, if that's case if you fill it up to where water just contacts the bottom of the plate, you'll get so much less smoke. *Watching the last scene there, it doesn't look like you can fill it to the plate w/o using a shorter grate, but I mean it makes a all the difference and you get no warping and never burn yourself picking up hot parts.
John A quick question from a sparks (retired ) is the bit that sticks outside water proof or is a drip proof , or not at all , eg duct mount Don’t want a 💀 John
Gotta wonder why they put the electrical connections on the part of the fan sticking OUTSIDE. They should have had the wires come out the front so you make the connections inside where it's dry. The way it is you'll need a weather proof box to make your connections. Sort of cheezy how the cord has to com in and be pinched by the bezel.
I had a nasty experience with a rag in a fan on some machinery ,I was bleeding injectors with the engine running and the fan sucked the rag in I was using to mop up the fuel. The plastic blades where hard and brittle .one blade broke off and took the rest with it in a second. Made a mess of it alright.
Should have thrown some oil on the steel you cut to really illustrate it working. Maybe just borrow a bee smoker. It certainly cranks on I hope it is well balanced or I don’t think it will last very long.
I am glad that you are thinking about your health and trying to get rid of the fumes that may cause problems later on in life.

I was going to suggest using an old car radiator fan, they move a lot of air and are cheap from scrap yards
