What are the 4 Roman Pastas?

- Got Guanciale?
These 4 dishes are a perfect example of how adding or swapping just ONE ingredient can completely change a dish. With that in mind, while it’s ok to swap bacon or pancetta for the more traditional guanciale, just know that you are tasting a different dish. Still tasty, just different.
To help more people get access to these harder to find ingredients, I actually reached out to the Italian shop where I’ve been buying my smoked guanciale for several years now. They are a small business located in Northern California, and they are truly passionate about sharing Italian food and culture with others.
They were so excited to help that they offered to set up a free gift for all orders that use the code TRIGGTUBE at checkout. So if you want to give these dishes a try for yourself and taste them just like they are made in Rome, please go to www.DonatoOnlineStore.com and use the code TRIGGTUBE for a free gift with every order.
Oh yeah… and follow me for the full recipes and tips which I’ll be posting as part of an upcoming series.

this is some good content. You are also so calm where every food youtuber goes for the chaotic style I hope you hit big
Thanks! Yeah. That's my style. I'll go big for jokes, but that's exhausting. Haha
Can only agree.
Exactly! You actually learn things unlike the LSD induced editing of others.
It's actually refreshing seeing someone take their time to talk about their food in such a classy and elegant manner. Nowadays it seems like everyone is on a rush to through as many ingredients as they can into their pans or cooking boards and it's just so tiring and uninteresting. The editing skills for those videos must be awesome, but what's with the rush? Like calm down a bit and let us enjoy the cooking. And it's not that I'm old and can't keep up with the videos, I'm just 27. But I remember the cooking shows I grew up with in the tv in the early 2000s and you do miss the love some of those men and women had for what they were doing.
everyone doing the slap, cutedit cutedit cutedit CHOP CHOP CHOP, style of editing? gross. Actually taking time to talk to your audience and explain things? Very nice
It's funny because the fewer ingredients, the harder it is because it usually requires better technique, while having more does offset it a bit, and makes it possible to cover
so very true… I'm not an anxious person, but carbonara always makes me nervous. And I'm making it tomorrow, lol.
Better ingredients, better techniques, Cacio E Pepe.
Absolutely true
I don’t think it allows you to cover for poor cooking technique, it just happens that tomato doesn’t split
Couldnt be that sometimes more ingredients just taste better.
I love the visualization of swapping out ingredients. it really simplifies the whole thing and ties it all together!
DUMBASS COMMENT. SWAPPING OUT THE INGREDIENTS MEANS NOTHING I DON'T SEE HOW THAT TIES EVERYTHING TOGETHER 😂
The ideia of a plate with 4 different types of pasta is just so appealing I wish restaurants around me had that 😅
Exactly 😂 As someone who likes a tiny bit of everything, this is perfect

The longer I cook at home the more I appreciate simple pasta dishes like these. It's not always a toss up between a red sauce and a white sauce like when I was a kid.
I can recommend dried mushrooms if you ever need to toss something together. I store them in jars.
When you need them:
🍄 take a hand full and toss them in hot water for 10 min.
🍄 Take them out of the water and squeez the water out
🍄 Sear them with some butter, onions and garlic
🍄 When they are as brown as u like add the mushroom water and reduce the broth
🍄 Toss the spaghettis in and put some Parmesan over it
I'll have to give that I try we love mushrooms in our house.

First time I ever had carbonara was actually in london (hear me out) at this small italian resturaunt, owned and run by an italian immigrant. He took our orders personally and he went back into the kitchen himself to cook. There was a window so people could kinda see into the kitchen, and Ive never been more stoked for a meal watching him make that dish for me. Best pasta I had ever eaten, hands down. I wish I could remember his name, or at least the name of the place
Finally someone getting Italian food right and shows how with few ingredients we make the most delicious food in the world( I am from Rome but I don’t eat past, but everything was correct, on point)! Bravo!
I went to Rome 2 weeks ago and I tried all 4 of the traditional pastas of Rome. They so wonderful❤
As an italian i thank you for making these iconic recipes the authentic way, they look so good!
None of them are authentic...
Wtf is wrong with you kids?
Are you bots made to comments, liars or seriously that ignorant about your own culture?
italians are the biggest bullshitters of the culinary world. made four almost identical simple pasta dishes, claim that those are 4 separate things.

The one thing I respect about Italian foods and Italian traditional chefs is that they protect the integrity of the simplicity of the dish. It tastes great with simple fresh ingredients. No need for excess or clutter

there’s something so simple and perfect about cacio e pepe, definitely my second fav after carbonara. also makes me feel smart when i pronounce “catch-eo ā pepe” so that’s neat
don't pronounce the 'i' in cacio… it's 'kacho', like in karma and chocolate (without the 'i', it would be pronounced 'kako', which in Italian is a persimmon)

A man on CZcams who actually understands and appreciates the Italian cuisine finally
There's a lot to understand, but I definitely appreciate it. 👍👍
As an Italian, I can confirm he's 100% right on everything. He has my _Italian Seal of Approval™_
Amatriciana its actually from a place in umbria (another region close to lazio the region where roma its stated)
The place its called amatrice.
Yes, but Amatrice is in Lazio. Close to Abruzzo, but technically still Lazio.
Amatrice is in Province of Rieti, Lazio.
What's your opinion on "if something is different then you can't call it *food name" For example, when people don't use guancale, but instead just toss in some bacon and still call it "carbonara". But others are so isulted by this and they scream on the internet from every corner about how "THIS IS NOT CARBONARA IT'S JUST A "PASTA WITH BACON, EGG AND PEPPER!!" But when it comes to restaurants, they can serve you "carbonara" in such a unique way, that you wouldn't even consider it a carbonara, but as soon as you eat it - instant realization from the flavour and overall texture of the dish. So where is the line?
P. S. My the most favourite is always a spicy one. So I support you on this one, friend!
Keep up the great content!! ❤
I think you can still call it that, just say it's "your Carbonara" or a "spicy carbonara"... it's more about how you present it. If you're claiming to make a classic recipe, you should respect the tradition and acknowledge it, but I support bacon, cream, spice, etc... that's how you get the NEXT dish. Innovation and adaptation is necessary, but don't present it as "This is carbonara" when it's "Carbonara with bacon"... just call it "Carbonara with bacon"
It's complicated, and at the end of the day, number 1 is to make it taste good and make it with love.
@@TriggTube
Totally agree on this. My negative affirmation was probably towards some "highly sophisticated and elevated" food snobs, who can't stand any kind of additions or variations except for the classic recipe.
In my country it's a common joke when people are getting mad because someone posts a video saying "today I'd like to show you how I make plov (pilaf with meat)". These guys are insanely judgmental and all they say is "oh, that's good, but don't call your rice with meat THE PLOV!" Even though the author's never implied he is authentic in any way...
So thanks for the answer, it's good to hear reasonable arguments combined with respect towards gastronomy! Wish you and your channel all the best!!
