I do different: I make carbonara mixture, then I cook my pasta. I then add my cooked pasta into the mixture, the heat from cooked pasta will melt it. 😋😋😋

Why is it called carbonara if there’s no carbonated drink in the sauce? Where’s the carbon from then? There’s no carbon in the video.
@@jasonvargas7564 Spaghetti alla carbonara (literally "charcoal burners' spaghetti" in Italian) is an Italian pasta dish made with eggs, pecorino romano, guanciale and black pepper. It was created in the middle of the 20th century.
Just made carbonara the other day. High quality guanciale and eggs from my own chickens, there's beauty in the simplicity

One of the “secrets” for the success of many Italian dishes is the cooking water. Unfortunately, many in the world did not understand the importance of cooking water (often using cream instead of pasta water, thus making the dish even heavier). But these videos help to understand these things.

@@poppymsp8828reserve some pasta water after cooking the pasta. Add it to the egg and cheese mixture and toss in the pasta. Don't bring the temp very hot all all or put it in a hot pan you will scramble the eggs and it won't be a nice sauce.

We could almost say that those who have never tried the classic Carbonara do not know what the real carbonara tastes like. Once they have eaten a plate of classic carbonara (as is done in Rome), people then just want to eat the real one, the original one.

🤦🏾♂️ try to pay attention next time. She said Classic Carbonara, key word "Classic". Their are hundreds of way to make this dish. What make you think the people who first made it, didn't add cream at some point. Food changes all the time.

The most important thing is that the people eating the food like it. If it's authentic or not is not really important. And if they like Sushi with mustard that's fine. Because it's nobody's business.
However it's important to keep the classics so that it's always well known that authentic Sushi doesn't involve mustard.
Using cream in Carbonara is not authentic but there's a reason why even in Italy many restaurants do it. That doesn't make it worse. It just makes it less authentic. If it's worse or maybe even better is up to the person eating it and we can't speak for that person.
It depends though. Some foods take from other cultures and put their own twist on it which becomes their own treasured dish. In Japan, a popular spaghetti dish known as “Neapolitan spaghetti” is made completely differently there. Also, Filipino spaghetti is made completely different with ketchup. Dislike it if you want but don’t shame other cultures for enjoying it.

Oooooookay I realize what I’ve been doing wrong. I’ve been adding the pasta to the pan I’ve been sauteeing my guanciale in (heat off) and then adding egg, but it always starts to cook the egg!! Lesson learned! Grazie!!!
That's not wrong, just a different technique. It's best to mix the cheese with the eggs and some hot pasta water first so you have a thick creamy paste. It helps ensure it doesn't become pasta Alla scrambled egg.

Hello queen!! I tried making this recipe today and it turned out very nicely. A few questions though:
1. Unfortunately I couldn’t for the life of me find guanciale in my local Walmart or farmers market. Any suggestions for good substitutes? I used just regular bacon instead.
2. Any cheap substitutes for nice Romano cheese brands? (For those of us on a budget)
3. What can I do to avoid clumping when I put the egg / sauce over the pasta?

I find that smoked streaky bacon is ok, ideally quite thick cut if you can get it. You can add some of the bacon fat and/or pasta water to the eggs to loosen them up a bit
To avoid clumping, turn the stove off once you pour the egg sauce in! Atleast it should help. The stove will stay warm enough to cook everything, even after it's turned off.
ALSO- Mix a lot, or furiously I could say! It won't clump together if you don't give it time to clump! Hope this helps ^^

When I went to Italy, an old lady made this for me. It was incredible. The pasta was not soggy soft and mushy. It was chewy and tasty.

Really? Noodles, eggs, and cheese are actually staples. You don't need the expensive italian cheese. If bacon is too expensive, you can leave it out or use cheap meat instead. I use smoked tofu instead. :)
@@greatxord3615 noodle and cheese are quite expensive in my country too. Its abt 3x - 4x more expensive than the normal meals I usually have. I live in South East Asian.

Finally the original recipe! Usually people add whole eggs (so also the whites) which is not the correct way. Eggwhite isn’t creamy at all, the yolk is and that’s what makes a smooth creamy sauce.
