  • We challenged chefs of three different skill levels - amateur Joe, home cook Lorenzo, and professional chef Saúl Montiel from Cantina Rooftop - to make us a dish of pasta carbonara. Once each level of chef had presented their saucy creations, we asked expert food scientist Rose to explain the choices each made along the way. Which pasta carbonara would you dig into first?

      The other two seemed to forget to use the pasta water to make the sauce, I was literally yelling at my screen when are you gonna add that pasta water.

      That’s how I make mine as well, with the only exception of not finding guancalle here😅 learned to do it the same way after doing a deep dive on how to make traditional carbonara

    My favorite chefs used to be Emily level 1, Lorenzo level 2 and Frank/Saul for level 3. Now that Emily has been promoted to level 2, Joe might be my new level 1 guy! Go Joe!

      Saul actualy did the dish justice using the proper ingredients. The other two versions would be much better with addition of more pasta water and a bit of heat to get creamier. Bacon nor pancetta is on par with guanciale but even in Italy guanciale is the most expensive of the meats, so it is understandable people try to substitute it.

      The only real difference between the three is how authentic it was in terms of the type of ingredient and understanding of the principle

      @@joncarroll2040- ​​⁠​⁠None of them were authentic. First was actually the closest. Only mistake was bacon.
      Other two majorly F’d up. Red pepper flakes? No. Parmigiano? No. Pancetta? No. Guanciale cut into cubes? No. Raw egg on top? No. And the thirds sauce was waaaay too runny.

    I was relieved to see Saul keep to the tradition of carbonara. I was afraid he was going to take it into some crazy direction, like when Remy made a croque monsieur in the grilled cheese challenge. Very well done by everyone.

    I think that being a level one chef is not just be about the skill level of the cooking. I think level one is more about the basics of making the dish with ingredients you may have on hand versus more complicated techniques and ingredients in the later levels

    An italian chef said you also need to remove the pepper side of the guanciale. Because when you fry the guanciale the pepper gets burnt and highly affects the flavor in a negative way.

      Nah you just cook it over lower heat and start the heat with it already in the pan so the fats melt out and protect the meat. You don't need to worry about burning the pepper that way it just takes a little longer to cook. You can even put some in later in the cook for a mix of crispy and chewy textures with the guanciale. You don't want to add plain pepper or more pepper to the fats and oils or it'll burn only later on if you need more. Removing the pepper side is removing a lot of flavor!

      It's cooked at such a low temperature for so long that it's essentially impossible to burn the peppers. That chef is incorrect.

    I haven't seen Joe before but he is great. I also absolutely adore Lorenzo and Saul. I am going to try this with Guanciale the next time I make it, for sure.

    I love all three of them! Each has personality plus and I think we can see ourselves in each one of the cooks. Joe is me when I just want to eat. Lorenzo is a weeknight binge on next level and Saul is the "want to impress my wife" level of cooking.

    Surprised Saul didn't handmake his spaghetti, but using authentic Italian pasta? Definitely a level 3 move!
    I've never had carbonara before, but watching these three makes me want to try to make it myself. I'd probably add something green to mine, though.

      For carbonara you actually don't want to use fresh pasta, dried pasta gives a better texture for this. Check out the channel of Alex (@FrenchGuyCooking), he made an entire series on dried pasta and visited one of the best carbonara chefs in Rome in the process. It's really interesting if you're interested in the more technical side of cooking

      Frank would've made himself Italian and then make his own pasta.

      If you buy dried pasta, I recommend buying rigatoni, since they allow the guanciale to slip inside for the perfect bite!

    I would have liked to see the three chefs trying each other's pasta and comment on the differences - whether they still liked their own version or whether they now preferred an other version of the dish. That would have been helpful.

      Level 1 & 2 overcooked their carbonara sauce resulting in it lumping & turning into scrambled eggs.
      Also level 1 & 2 did not mix enough Parmesan into the the sauce with the eggs.
      Imo the sauce should be pretty thick (you put in quite a lot of parmesan into it) then you put it into the pan with the pasta and dilute it with the starchy pasta water. If your sauce starts out thin then you add starchy pasta water to it it... then it will become even more way too thin and it will fall apart.

      i think its because the heat
      by the time you put the cheese on you should have to turn off the stove so the pan didnt contain much of high heat. lvl 3 chef knows this
      also the egg, lvl 1 put whole egg for the sauce, whereas lvl 2 and lvl 3 actually correct with the amount of egg yolk and the whole egg tho

    You can make it the exact same way the pro chef made it, with bacon or pancetta for accessibility. The key is not adding the egg whites, and adding some luke-warm pasta water to the yolks before you mix it in. The other two chefs had egg whites and you can see the "scrambling" effect this has on the dish which is REALLY really unpleasant.
    I'll say this as well, I'm pretty impressed that the "amateur" didn't make a cream-based dish. It's just unfortunate he kept *all* the whites in

    Level 1 did better with the pepper than the other two. Pepper is an essential ingredient.

    Saul's Carbonara is perfect! But I would like just to point out to Saul that we dont use cream in Alfredo. Alfredo is just butter and cheese. Americans that love put cream and chicken on it.
