  • This is the most requested recipe that I make in my kitchen - my sweet coconut rice! You can always find a tub ready to be heated up to accompany any leftover meats in my fridge. We use it as a base for most everything that you could make a bowl out of. I make this 2-3x a week and when I see that it's getting low, I throw on another batch in my rice cooker. From chicken teriyaki bowls to salmon bowls to curry bowls, you can always be assured that the rice in the bowl is this delightful and sweet coconut concoction. This is the EASIEST recipe to make and it takes just a just a minute to throw together in my Aroma Rice Cooker with a can of full fat coconut milk (any brand), water, sugar and salt. That's it!
I hope you enjoy this recipe as much as my family does. You'll never make regular white rice again!

It's crazy how much some stores charge for coconut milk (full fat) when. you can pick it up inexpensively at Trader Joes. I buy at least 10 cans at a time so I always have it on hand for recipes. Coconut milk is a great substitute for dairy. I use it all the time. Love my rice cooker as well. Such an inexpensive tool to make rice + mine has a steamer basket inside of it so I can make rice AND steam broccoli or brussel sprouts at the same time. When the rice is done I can then throw the veggies into a pan with a little olive oil and crisp them up. With the sprouts I'll add balsamic vinegar and a bit of olive oil till they're crispy (to die for) and with the broccoli I'll add a bit of olive oil, red pepper flakes and some TJ's sweet chili sauce. OMG so yum. Then you have a nice rice bowl with a flavorful veg and your protein. Magic in a bowl 😋

What is the make and model of your rice cooker?

@@ScarlettHunter I use the Aroma Rice Cooker. Mine looks different than the current model since it's older, but here's a link to one that's on Amazon that is the newer version of what I have. Super simple. www.amazon.com/Aroma-Housewares-Cooked-UNCOOKED-ARC-914S/dp/B000ZMD5I2/ref=sr_1_8?dchild=1&keywords=aroma+rice+cooker&qid=1605556171&sr=8-8

I'm going to try this! I think I want to add crushed pineapple to mine though. So instead of water, subbing pineapple juice too. Also, I'm going to sweeten mine with condensed milk! :)

Did you add the pineapple juice? How did that work out for you?

You should rinse the rice. Without rinsing, it's looked dirty.

No you don't need to rinse rice as she explained.... You do it your way
