I got my Elite Gourmet rice cooker yesterday and suddenly had a craving for chilled rice pudding. Your instructions are clear and really simple to follow and so I'll give it a try this weekend since it'll be too hot to go outside. I also have Roger's book---he owned a Zojirushi high end model.

I tried your recipe this past weekend. I used instant brown rice. I must say the rice pudding turned out perfectly. I especially like the consistency. Not too watery or too thick. It was also much faster to make rice pudding in this way than I thought it'd be. Thanks for a good recipe.

EDITED TO UPDATE: I made a pot of rice for dinner, left half in the rice cooker and proceeded with the rest of this recipe. The only difference was that I used vanilla almond milk, and it came out AMAZING!!! Thank you!!!
We never ate much rice when I was growing up and my mom only made "real" rice (read: not minute rice) on New Year with Swedish meatballs, and when she made rice pudding, One of the things I love about eating Chinese food is the steamed rice, but never got good at making it, not that I tried often. It wasn't until I married a Cuban man that I learned to master rice. He taught me to wash, and not just rinse it. In fact, if you look at Japanese kitchenware you can find special bowls designed just for rice washing, so you can scrub it, then you tilt the bowl and it has a colander type section so you can drain it. Anyway, it wasn't long before he bought us a large rice cooker because we started buying our rice (about every 9 months) in a 50lb bag at Sam's Club. I'm divorced now, but still an avid rice fan. If you want a real treat, put some cream of coconut in place of some of the water when you're cooking your rice for an amazing sweet rice that goes amazingly with barbecue.

I love rice and I love rice pudding! This is very similar to my cooked rice pudding on the stove. You have to try adding some lemon rind, I usually add 1 long strip for a cup of rice, then remove it at the end. The lemon will make the rice pudding taste amazing, very Portuguese, except I never add the egg yolk to my rice pudding either. Thanks for sharing this recipe. I am definitely going to use my rice cooker more now. You have unleashed the beast! :D

Just tried your method & proportions (using short grain "sweet" rice), 2% milk and substituting Splenda for sugar, and it came out perfect. Other videos use sophisticated rice cookers with a porridge setting, etc. Yours method works in the simplest cooker meant for white rice. I'm sure one could add butter, cream, beaten egg yolk, if one wants a richer result. But I don't fee it is necessary. I'm enjoying what I made right now, and it is still warm from the cooker...very good!

Even though I have lots of measuring cups and spoons, I measure many of my flavouring ingredients just like you do. Off to try this, but I might dig out our old rice cooker that may have had a slow cook porridge setting on it.

I made with less milk, substituted honey for the sugar (using half the amount) and brown rice instead of white. I also didn't keep the lid on my rice cooker after it began to steam with the milk ingredients. Turned out pretty darn good! Only negative was I put in way too many raisins. Thanks for a really easy recipe!

You don't actually need to rinse the rice if the intent is Rice Pudding, you want the extra starch to help firm up the pudding's structure.
