    I accidentally dumped in a whole cup of raisins instead of 3/4 of a cup. I tried to fix it by dumping in another quarter cup of raisins but that just made things worse. The only way I could think of to safely dispose of this mess was just just sit there and eat it all. I did this in the interests of Public Safety. You can thank me later.

    It's called "tempering" your eggs. If you just pour them in, you will wind up with scrambled eggs, much like when you make egg drop soup. Ideally, you would take some of the milk from your cooking pot and slowly add some to the eggs, to increase the temperature of the eggs slowly before adding it to the mixture.

    I just got my IP this past Christmas and it never dawned to make rice pudding. This recipe is spot on and good for errors. Three things i accidentally/intentionally did differently. 1. I mixed the sugar with the egg and milk instead of putting it in the rice. 2. i didn't strain the egg mixture. 3. I didn't have vanilla extract, so I used Licor 43 and it was a surprisingly delicious replacement. (i was going to use bourbon as many suggested, but i don't like the taste of alcohol in my desserts. I know I am weird). This recipe turned out perfect, even with the mishaps. thank you for it... :)

    I just made this and it was absolutely delicious!! I also substituted the milk with coconut milk and it was incredible. I think I'm going to have to double the recipe next time, or maybe even triple it 😀 Oh, and I did use long grain rice and it was fine. I agree with another poster regarding the consistency of the pudding with the long grain rice. It was a bit firm, but once the egg mixture was added, it was just right. Thanks again for sharing this fantastic recipe with us 😊

      Ar R I too used coconut milk! Think next time I will go with 1/2 cup sugar with the coconut milk. I also added nutmeg and then sprinkled cinnamon on top. I skipped the staring of the egg mixture and it was fine.

    Brilliant video and new subscriber. It reminds me of my beautiful wee Mammy's rice pudding. It took her about 2 hours to cook it in the cooker and then the oven. I could hear my wee Mammy saying that's how I made mine hen. Cheers for the recipe and video Doll.

      I do believe that SOME ' fortified' rices should not be rinsed... as it washes away the re-added vitamins etc.

      Faith Rada not to mention you wANT the starch in this- the only time u wash rice is if it’s like an ethnic placed with pebbles and leaves that need to be picked and rinsed

    Thank you Sandy ! I am totally hooked on your recipes. I am new to instant pot and first recipe I made was rice pudding (double the dose) ....OMG the best thing ever, I can safely say I am never buying rice pudding again. My kids literally devoured it :) . Then same afternoon I made for supper your recipe for one pot meat spaghetti ( with marinara sauce) and that was another hit !!! You make it easy to follow and explain really simple for us beginners, so thank you and please don't stop ! Happy New 2019 :)

    We aren't a big dairy family so I think I'm going to try this with a can of coconut milk. I have found great success using up my older raisins (the ones that get kinda crystalized) in the instant pot. They puff right up :-)

    I had no need of eggs. Just cooked the rice in the IP with the milk, sugar and lemon zest. 10 min. HP and 10 min NR. Then stir in two tbs of lemon juice and a good amount of ricotta cheese. Tadaaaa! Really thick and creamy rice.

    For breakfast rice hot cereal, I add 1 tablespoon butter and saute to melt because plastic in rice I put rice and water in a bowl, remove the floating plastic, and put rice & eater in and pressure cook, the rice absorbs both flavors and the butter keeps rice from sticking , When I didn't have to remove floating plastic I put rice in without water and coat it with the melted butter before adding water. I Love it and it's a great night snack, in front of the TV or playing board games on a chili winters night. sugar and milk can be added to taste, raisin nuts etc. to taste.

    Delicious recipe. I added more salt, vanilla and less sugar, but all that is determined by what your tastes dictates. I also added some nutmeg and cinnamon. The beauty of this recipe is how easily you can tweek ingredients.

    The Silicone gloves are soi nice and you can pick that pot up and never fill the heat from the pot. You can't feel the heat fro. The oven. They are so nice

    I never use water I use eggs unstrained and my rice pudding is delicious. Never tried the IP I bought Fagor and IAIQ and love them. My second week of use. I do not like the cheese cake made in these pressure cookers however. Everything else is wonderful. I forgot: I use any ole rice. My mother made rice pudding the way I do and it always came out great.
    I boil the rice in the milk, temper the eggs put it in of course I use vanilla and I use cinn.

    Great recipe, if you would like to really enhance this recipe, remove the salt and replace with the following.
    4 cardamon pods, cracked open.
    3 whole clove's
    1 cinnamon stick
    Add this and then cook on high for three minutes, using a teaspoon remove the clove's, cardamon and cinnamon stick before adding the milk and egg to sauté. The vanilla works well. You can use nutmeg rather than cinnamon, if so add this after the initial 3 minutes cooking but before sauté. Your welcome.

      Look under the minimized video and you will see a tiny triangle. It is directly to the right of where it says “Instant Pot Rice pudding”. Tap that triangle. Under where it shows Sandy’s name and subscribers ( left side of page) you will see a website printed in blue". Tap it. When you get to the website, scroll down until you get to the recipe box, and then under the small picture on the top right hand side of the recipe box you will see a 4.4 star rating. Under that is an option to print it out. Hope this helps.

    The reason you strain the egg mixture is to get that awful looking glob out of the egg. I saw the reason on another video. I don't cook an egg unless I remove it everytime...Just saying

    I made it but i added 1 tsp cinnamon and 1\2 tsp nutmeg, i foiubd those amounts a bit to much so next time i will add 1\2 tsp cinnamon and 1\4 tsp Nutneg.
    The only thibg else i done different was i didn't bother straining egg mixture, instead i just added the eggs to a biwl and took 2 spoons and removed the white sperm things yuckie hehe, then i added the milk and vannila the mixed.
    BOTTOM LINE : IT WAS LIKE MY MOM USE TO MAKE WHEN WE WERE KIDS way way ok way hahaha back in the day.

    Vey different then another recipe I saw, what I like most is how you didn't use condensed milk. I use special lactose free milk which is undone when I add lactose condensed milk. I can't find lactose free version in store and online is very pricey.

      We buy our Lactose free milk at Walmart under their own label and it's way cheaper than the name brand.

    Have you made with reg. long grain rice?

      No, I haven't. The arborio rice is a very starchy, short grain rice. That's why it comes out so creamy. This is also the rice used for risotto. It would be a good test. I think my mom used to make rice pudding with plain old long grain rice. It wasn't as creamy, but us kids didn't know the difference!

    If you had to guess, how many cups of rice do you think it is after it’s cooked and before you add the other ingredients. I always end up with cooked rice leftovers from dinners and I need to know how much to separate for this recipe. 😊 thanks!

    Did you soak the raisins in Vodka, Gin, or Rum? I've heard dark raisins in Vodka, and light raisins in Gin or Rum.

      I guess I'd just try doubling it and see what happens. If it is a little runny you can turn on the Sauté function and cook out the excess liquid.

      It wouldn't hurt to try it. I used to make a version of rice pudding on the stove with regular rice. It may not be as thick, but it will taste good!

    Pudding is really good but basically after all is said and done, all that one is using the instant pot for is cooking the rice. Otherwise the sauté mode usage could easily be done on a stove top. No? Or am I missing something?

      I think the entire concept of the Instant Pot is that you can use it for all sorts of different things or steps in a recipe without using another pot or pan. It's a convenience thing.

      The eggs make it taste fantastic, like a custard. I make mine a little different. I use a can of sweetened milk and less sugar.

      Well if this is a sore point with you, get prepared. There are Instant Pot recipes for bread, but only the dough is proofed in the pot. How about the recipes where they just use the pot as a double-boiler to melt chocolate, but call it an Instant Pot chocolate cookie. It really doesn't matter, and if you get hung up on this trivial thing, I'm really sorry.

    that is a huge amount of sugar and I see this everywhere...vanila and fruits make it even more sweet.
    if you boil it in milk from the beginning it will change the taste for the better ..way way...better
