All the recipes are plant-based/vegan and gluten free (two use spelt flour but there are gf swaps for it)
This is one of my favourite ways to show how delicious vegan cooking is. It's hearty, filling, warming, easy to make and all round such a winner with friends and family! It's a fave in the Deliciously Ella office too, we have it for lunch all the time.
To make it you'll need:
1 large sweet potato
1⁄2 butternut squash
3 tablespoons coconut oil
1⁄2 teaspoon ground turmeric
1⁄2 teaspoon ground cinnamon
1⁄2 teaspoon chilli powder
1 teaspoon medium curry powder
2 red peppers
1 teaspoon cumin seeds
1 teaspoon black mustard seeds
1 large red onion
3 garlic cloves
2 green chillies
1 tin of coconut milk
1 tablespoon coconut sugar or maple syrup
juice of 1⁄2 lime
100g baby spinach
salt

I'm completely obsessed with Sri Lankan curries at the moment, I love them even more than regular curries, in fact I have just finished eating one whilst watching this video from my local Sambal takeaway. this technique of 'pre-roasting' veg with spices in the oven before you add it to curries or chilies or stews is so perfect and really amps up the flavours! I made my sweet potato chili this way and it was so perfect!!! will try this one in the next week :)

This is such a similar recipe to the one I’ve been making for years. I usually add French beans instead of the spinach. All my meat eating friends love it. It’s especially good when the butternut squash starts to mush and become part of the sauce.

This one is my absolute favorite! Always make a double batch to put a few portions in the freezer for busy days.
