How to bake a sublime Ginger Biscuit | Paul Hollywood's Easy Bakes

- This week Paul is Baking Ginger Biscuits. Crisp and crunchy with a hint of warming spice, you can’t beat a ginger biscuit. A perfect biscuit for dunking into a cuppa!
Makes 18
225g plain flour
2 tsp ground ginger
½ tsp bicarbonate of soda
100g golden caster sugar
100g butter, softened
100g golden syrup
Mix the flour and sugar together. Add the butter and rub it until it resembles breadcrumbs. Add the syrup, ginger and bi carb. Using a hand-held electric whisk or wooden spoon mix to form a smooth dough. Wrap the dough in cling film or baking paper and chill for 30 minutes to firm up. Heat your oven to 190°C/Fan 170°C/Gas 5. Line two baking trays with baking paper. Break off small pieces of dough, each about 30g, and roll into balls. Place on the prepared baking sheets, allowing enough room for the biscuits to spread. Bake for 10-12 minutes until they are golden with a cracked surface. Leave the biscuits to cool on the tray for a few minutes until firm, then transfer to a wire rack to cool completely.

You might think I am crazy, but 1/4 tsp black pepper gives an extra bite of heat to these! You cannot taste pepper, just the bite of ginger heat!

That's exactly how I make them, except I usually sprinkle a little sugar on them after they come out of the oven. So easy, so tasty!

You read my mind. I thought about making ginger biscuits earlier today, checked out your channel and just hours ago you released a ginger biscuit video. I made mine using black treacle and a light muscovado. Curiously my doe balls didn't collapse, I had to press them down. But they baked to become true ginger snap biscuit. The treacle flavour competed with the ginger but the taste was still awesome. Best ginger biscuits I've ever made.

Totally Yum. I usually always have biscuits with a nice cup of tea but I've gotta say that ginger biscuits are really delicious with a cup of coffee. I find dunking these biscuits in coffee really brings out the ginger flavour. My mouth is watering just thinking about it....I'm off to the kitchen.

I love mixing dough with my hands. Relaxing.
Had a former friend once ask, absolutely shocked when she realized I mixed my dough with my hands, "Do you feel your hands are clean enough?" I just said WASH YOUR HANDS BEFORE YOU COOK. Scrub them if you need to. I am a habitual hand washer. I raised my kids to wash their hands as a HABIT NOT A CHORE. I think that's pretty simple logic.

Paul, if you use you butter wrapper on the bowl you put the syrup in before adding the syrup, it will slide right out when adding it to your recipe.😉😊

I’ve made these cookies twice and love that they come together perfectly with no noisy mixers! Perfect for stealth baking….
I added the zest of one lemon and used regular caster sugar instead of golden. Measured them to 20g each for a yield of 26 cookies. Careful, these little babies are addictive! Update: Right now, multiple batches in, I have settled on using the zest of one orange as my one and only swap out. No more lemon or trying cardamom, etc. just the single orange zest makes these little suckers pop! 😀😜

Hi Alison, you seem like a talented, adaptable good cook. I'm medically allergic to gluten and maize. Haven't had the joy of a ginger-nut dunk for many years. Do you think this recipe could be adapted using a replacement flour of - 1/3rd coconut & 2/3rd tapioca flours? I'm totally useless at 'experimenting' and nothing seems to turn out good and so I stopped trying biccies and think o the positive side - that it's good for my waistline!
@@chrisreynolds3351 Howdy! I have never used coconut or tapioca flour (have used rye, almond, regular), so I’m hopeful that someone who HAS will see your query and respond in a more helpful manner! What I know is that coconut flour has a higher absorbency than regular flour, which will result in different finished texture of the bake, so that’s going to mean you’d have to slightly increase the golden syrup in this recipe which might not achieve desired results. I supposed you could try using 1/4 - 1/3 ratio of coconut flour for every 1 ratio of regular flour called for, and keep the golden syrup as stated in recipe. For this one, if my maths are right, that would mean 56 - 75 g of coconut flour. Tapioca flour is a total mystery to me so I’m not even going to hazard a guess!
Usually when I adapt recipes I only swap out spices, or add some soaked fruit inclusions or make a drizzle for atop said baked item. I’m not advanced enough to start swapping out dry and wet ingredients - once you do that you’re venturing into the chemical and scientific nature of baking, which is fun and fine if you don’t mind tipping things into the trash! 😬. Best of luck!

I made these by putting all the ingredients in a mixing bowl together, by using the mixing bowl there is no need to separate all the ingredients, I cooked them on 160 fan very pleased with result.

Have you tried Nordic style thin ginger/spice biscuits.
In North America (I mean Canada & USA), a cookie refers to all - a ginger snap is a cookie. All snaps are cookies - generally round in shape. Here, biscuits are what you might call a scone. :O)
Terrific texture. I’d add a little bit of salt and maybe some chopped up crystallized ginger and a dash of pepper to up the spice level next time.

That's one job I hate doing Paul is rubbing the butter into the flour, I've just bought a pastry cutting in tool from Amazon which does it for you. The biscuits look lovely, you can't beat a ginger biscuit. I also dunk mine
