Old Jim uses an easy method of making biscuits. A no need to roll-out biscuit dough recipe.
You can add ginger, or just have them plain. Either way these biscuits are a real treat with an afternoon cup of tea !!

Since my last comment I've now baked a few batches of these excellent biscuits all turning out very well indeed. I've just baked more; now I add a TBS of vanilla extract and also add a full glace cherry on top; they are delicious. I use "Pure" dairy free margarine bought from Morrison's and I've found 125g of self raising flour works for me saving adding a bit more flour to thicken the mix. I'm using a fan oven and at 140C let the biscuits bake for 35 minutes giving a crusty top but once stored in a sealed container they soften up. I use a large baking tray lined with a silicone non stick sheet and using a 55mm ice cream scoop the mix makes just six but large biscuits; my wife and I love these I scoff a full biscuit but my wife cuts one in half. I've also made these with currants. I'm new to baking so like to experiment a bit.
Last Monday I also cooked my first ever cottage pie using your method & recipe; it turned out so well every Monday dinner time in future will be cottage pie time.

Hi Jim, can you substitute say... coconut flour ... or tapioca flour so they're suitable for Coeliac suffers who are allerfig to gluten? Then they'd be suitable for everyone. A lot of other recipes use golden or even dark treacle and brown sugar - what do you think? I quite fancy the sound of coconut and ginger cookies. I can't cook for toffee but you're quite good at this demonstration lark - so perhaps if you could make gluten free coconut and ginger biccies I could follow you. PS: Coconut makes things soft and fluffy - my pancakes practically float on air - so I've no idea what they'd do to your biccies.

Can l use lcing sugar instead of sugar
Icing Sugar has cornflour in it. So it's better to use Granulated Sugar, or Demerara Sugar!!
