- Sweet Corn Casserole for Two! Using a counter top oven makes it energy efficient compared to using a full sized oven.
/ Ingredients:
3-4 Tablespoons butter (melting in dish)
1 Large Egg (beaten)
1-2 Tablespoons Sugar
Dash of salt
½ teaspoon Vanilla Extract
2-3 Tablespoons French Onion Dip or Sour Cream
½ cup Green Giant Steam Crisp Mexicorn (or Whole Kernel Corn) - drained
½ cup Cream Style Corn
1/3 cup Corn Meal Mix
Pour in hot dish and bake at 350 until golden brown (20-25 minutes).

According to the manufacturer the Nuwave Oven uses a combination of convection, conduction, infrared and contact heat to cook food. I've had this one for many years and use it all the time.
Ken, very nice recipe & being our family is from rural Kentucky, we waste nothing, I can cut corn off the cob, the cob milk raked with the topside of the knife, corn oil , corn jelly, & we had an out house so, well you know what the cob was used for when dried out. A tip, if you have a bundtpan , roast, nuke , etc... soaked in water corn in the husk , shuck the husk, stand the cob upright on that stem in the pan, shave your corn , etc... pan will catch , even the corn milk , oil, etc... need pectin packet for corn jelly, God Bless ya'll

looks good! both of my maternal grandparents were Southern -- Alabama, specifically -- so Mom grew up liking her cornbread on the sweet side, and that's how i like it. 😀 i imagine your casserole to be "just right" for sweetness, too. 😀
