蜜汁豬肋排|年菜必備料理!免油炸免烤箱,簡單又美味!Taiwanese-style Honey Glazed Ribs

    料理手札:
    將肋排以冷水下鍋汆燙,並適時撈起表面浮沫,使風味更鮮美。
    肋排與醬汁烹調時,維持小火,並煮至些微收乾即可,避免醬汁燒乾,而產生苦味。
    肋排主要可分為兩種部位,「里肌肋排」為全瘦肉質,「五花肋排」為肥瘦相間,大家可依照喜好口感調整。

    食材
    里肌肋排-500g、青蔥-1支、薑片-10g、米酒-2湯匙、白胡椒粒-1茶匙、常溫水-1200ml、白芝麻粒-點綴
    醬汁
    醬油-2湯匙、熱水-100ml、白砂糖-2湯匙、蜂蜜-2湯匙、烏醋-1湯匙
    步驟
    (1) 將肋排切成小支,放入鍋中,再放入青蔥、薑片、米酒及白胡椒粒,倒入1200ml的水。
    (2) 將水以中火煮至沸騰,撈起表面浮沫,轉小火蓋鍋悶煮30分鐘後,將肋排起鍋備用。
    (3) 將所述醬汁拌勻備用。中火熱鍋,倒入1湯匙的食用油,放入肋排油煎至表面金黃。
    (4) 轉小火,倒入醬汁拌勻並煮至些微收乾後,迅速與肋排拌勻。將肋排盛盤,撒上白芝麻粒點綴,料理即完成。

    Ingredients
    500g pork baby back ribs, 1 green onion, 10g sliced ginger, 2 Tbsp rice wine, 1 tsp white pepper seeds, 1200ml water
    Sauce
    2 Tbsp soy sauce, 100ml warm water, 2 Tbsp sugar, 2 Tbsp honey, 1 Tbsp black vinegar
    Instructions
    (1) Cut the pork ribs into single pieces, then transfer to the pot. Add the green onion, ginger, rice wine and white pepper seeds, then pour 1200ml water.
    (2) Boil the water over medium heat and skim off scum from the water, then turn to low heat. Cover the pot and simmer for 30 minutes, then lift the pork ribs out of the pot.
    (3) Combine the sauce in a small bowl. Heat the pot over medium heat, pour 1 Tbsp cooking oil, add the pork ribs and pan fry until golden brown.
    (4) Turn to low heat, add the sauce and stir well until the sauce is reduced. Transfer the pork ribs to a serving plate, then sprinkle white sesame seeds. Enjoy!
