    My dude you have to use the hand guard when you use a mandoline. It gives me anxiety just watching someone rawdog a slicer like that.

      I can't abide those clunky hand guards. But I also like my fingers just where they are. So I got a no-cut glove. Highly recommend!

      I was about to post a similar thought. I also find it a bit ironic when you'll see someone using a knife to slice something very thinly (and often fairly quickly) but they get squeamish at the very thought of using a mandoline.

      I’ve never used a guard I go to where I’m comfortable and then it gets put in a vacuum, sealed freezer bag for stew later cut down on food waste all buy an extra three potatoes if I’m doing like an au gratin or something of the same nature so that I can get the amount I want and then I just Passed that along to the next dish and what’s a potato $.20 so $.20-$.60 so that I can feel safe and have something for another meal…esta bien

    As a Portlander, I am offended that you would think Portlanders would add sugar to ground beef. We would make an organic and locally sourced lentil burger before adding sugar to it and charge you an additional $10 and call it a culinary experience

      True but tokyo sando does have a pork/chicken katsu sandwich which basically has Japanese BBQ sauce and tartar sauce and it’s one of the best things I’ve ever eaten so he’s not exactly wrong…

    Pretty sure he's taking these burgers to the extreme of what they could be, because in Wisconsin butter-burgers are just, burgers. But you butter the bun. Not with tablespoons of it, unless that's your fancy, but a normal sandwich amount of butter. Usually has normal toppings as well, whatever you like. Lettuce, tomato, pickle, peppers, whatever you please.

    I think the beauty of burgers is the simplicity and versatility. They can be as complex or as straight forward as you want and there are endless variations. Love George Motz, too, he's so enthusiastic and fun, it's awesome!

    David I love watching you make burgers because while they might be simple, they are easy to screw up. I feel like which each burger you just keep on improving. So I say make burgers for as long as you want. Plus you can get creative with the ingredients and toppings. Maybe you can create a signature David burger.

    Galley Boy burgers are good, I would say the ones from Swensons do not have a whole lot of sauce on them and the sugar is definitely not burnt. Everything about it is subtle.

    We make the onion burgers but we put the onions down first, then put the beef on top the bun. I also season the ground beef with - gasp - dry ranch seasoning. They are delicious.

    7:52 I think one important missed part of the deep fried burger is that it’s fried in beef talon from past fried burgers. Not saying it’s better for you. But it makes a massive difference in flavor

    David, I'm a resident of a suburb of Cleveland, OH. The Swenson's burger is not great, tbh, as you found out lol. What I can tell you, at nearly 50 years old (turning 50 on the 11th of this month YIKES), the single BEST Smash burger I'ver EVER had is from a little dive bar in Eastlake, OH called Crowleys. It just won an award for the best Smash burger in Cleveland. It. Is. Incredible. If you're ever traveling through, because, let's face it, no one is traveling to Cleveland for fun lol, stop in and try one. LOVE your channel

    Swensons! Yeah, the added sugar in the ground beef is one of those love it or hate it things -- even for the Akronites among us. I must admit I've enjoyed a Galley Boy or two in my days, but anymore, I'd rather have the fried fish sandwich, a coney dog, or a sloppy joe. If nothing else, the Galley Boy is a UNIQUE burger!

    I believe it’s White Mana in Jersey City that invented the slider/steamed bun method.
    I also enjoyed the little jab at Portland as it’s not too far off. That said, if you find yourself in Portland, go check out Lo’s Burgers inside Creepy’s Bar in SE. They have a twist on the OK onion burger that has not just the caramelized onions but also fresh onion slices and deep-fried crunchy onions. It is a delight, but probably a once every 6 months sort of meal.

    Wisconsinite here: Just go to Culver's for a Butter Burger. They're pretty tasty. Though, get the cheeseburger and condiments. Do yourself a favor and upgrade to the cheese curds for your side.

    FWIW, the Galley Boy is from northeast Ohio, not central Ohio - Akron, specifically. I’ve always felt that in addition to brown sugar, there’s also a subtle touch of cinnamon in there as well. A great burger indeed! And don’t knock the olive! For whatever reason, it just works! If you ever make it out here, definitely visit the OG location! And as a side quest, you’ve definitely gotta experience a Romanburger from Mr. Hero!

    Swenson’s is great, but I’m also not a galley boy kind of gal. I think you put a bit too much sugar in the meat- it shouldn’t caramelize/burn like that. Drive on down (to northeast Ohio, not central), get a burger made however you like, some potato teezers and a milkshake. Be sure to tip the carhops more than seems necessary. 😂

    I don’t understand deep frying a burger. The caramelization from smashing will get it sufficiently crispy. Having been born and raised in Wisconsin, I can fully attest to the butter burger. But that last one with the onions looks amazing. I need to make bun have smash burgers soon.

    I’ve not had the galley boy, but i have had swensons cheeseburgers before, & my biggest complaint with their normal burgers is just that i feel their burger patties don’t have really any flavor. i feel they rely on toppings for flavor. my sister likes galley boys tho 😂

    When u make a smash burger - smash the meat ball super super thin otherwise you have a dry burger -/ you want to smash the burger paper thin as smashing releases the juices so the harder the smash - yes you need to put some elbow grease into it the more juicy the smash burger will be as it cooks that fast that the juice left over will be cooked with being dry 👍👍

    Come to Ohio and try an actual Galley Boy...and a size of potato teezers are a must (basically tater tots with cheese and jalapeno).
    It doesn't make sense and it's definitely more than the sum of it's parts. It's not exactly tartar sauce and it's not exactly barbeque sauce. If you just use those things it will be pretty weird.
    And sugar in beef is like a cheat code! You don't think of it in burgers but think of things like Chinese takeout, or American barbeque for that matter.

    I live near Cleveland and I’ve never liked galley boys. The combo of Tatar and BBQ sauce has never done it for me. Whenever someone says they love galley boys I always silently judge them lol

    But man, their BBQ sauce is nothing like the bottled stuff. It isn't very sweet at all. Also their tartar sauce is quite unique too, and has miracle whip as it's base.
    Basically you didn't do it justice at all.

      Yes, it’s Skyline chili! (Tho I’ve seen people say it’s more like a Greek-style bolognese, as the owner of the restaurant was Greek) You don’t taste the chocolate at all, it’s pretty good! Very popular around Cincy.
