- Pepper Teigen, mom of Chrissy, makes her hometown version of pad Korat from her new cookbook, The Pepper Thai Cookbook: Family Recipes from Everyone’s Favorite Thai Mom. Like a saucier and spicier iteration of pad Thai, pad Korat can be made with chicken, beef, tofu, eggs, or vegetables. I spent a week in Korat a couple years ago. It's the second largest city in Thailand but visitors don't really stay around apparently, as it seems to serve as a transit hub between the north and the south. I think that is a shame, cause it is a wonderful city.

That’s all it takes? Not her technique, knowledge or knife skills or anything like that? You know had her knife slipped she would’ve cut her finger to the bone with a dull knife, which is a pretty awful injury. Not so legit as any cook that has the hands to prove their legitimacy in a kitchen can attest.

Pad Thai is not usually spicy. but Pad Mee Korat has a bit of a kick to it. Similar but different!
