HOW TO MAKE PAD MEE KORAT | KORAT NOODLES | ผัดหมี่โคราช

- Pad Mee Korat (ผัดหมี่โคราช) is similar to Pad Thai but there are definitely some differences. For one, this stir-fried noodle is a local specialty from the Northeastern Thai city named Korat and can easily be made vegetarian because of its lack of fish sauce. Instead, it uses a fermented soybean paste as its salty component. Other differences are that it uses toasted chili flakes, making this spicy, and the noodles are boiled and cooked completely in the sauce itself. This is why Pad Mee Korat is believed to be more flavorful. It's a little sweet, spicy, tangy, and savory. While this particular version is not vegetarian due to my use of pork, you can easily make it vegetarian by swapping the protein out with something else. I hope you enjoy this video!

I am also SOOO glad I was watching David Pakman's stream when he sent us over to your channel. Otherwise, I may have never found it. Your channel has become one of my FAV cooking channels.. It goes way beyond cooking, it's ART.. and very peaceful and calming. Thanks
That means so much. It's a labor of love and I enjoy making them. Thanks so much for sticking around. I appreciate your support!
I just had dinner about 2 hours ago, but after watching this video I´m hungry again. Every dish you post here looks amazing.
Thank you so much!
Pad means to stir fry. Mee means noodle. Korat is the name of the city that this local specialty comes from.
I’m glad I followed David Packman’s recommendation. Your videos are beautifully photographed and serene. Your instructions are clear and the food looks delicious. Thank you! Oh, and don’t forget to give the video a like, folks. 👍
Thank you for your support Richard!
You know what your videos calm me big thanks for David Packman for the introduction.
Thank you so much!
I love the way you make the sauce first and then add the noodles later that’s an authentic way. It’s a lot easier with the Korat noodles which is only find in Korat but can substitute for Thai noodles but if you get a chance to go to Korat please try the Korat noodles
WOWWW, that looks sooooo AMAZING. I really love the cinematic element to your videos. I LOVE Thai food.. Thank you..
Thank you!🙏
Looks so good - going to try
Wow the quality of this video is AMAZING! I subscribed! Keep up the good work 👍🏻
Thank you so much 🙏😁
because of the beautiful music and background, I forget just how much I learn about cooking from u, Never would have thought about cooking the noodles directly in the pan like that- and how not to overcook the beansprouts.. just wonderful : )
That means a lot. Thank you so much Anna, for your support! Traditionally, the noodles are cooked directly in the sauce for Pad Meet Korat, where in Pad Thai, the noodles are prepped a bit separately beforehand. I'm sure both ways will do just fine. Thanks again for watching ☺️🙏🏼
@@ThunThunChannel U re right of course! I think cooking into the pan works better here because Pad Meet
Korat is a richer dish, on its own, and Pad Tai is eaten with other dishes,; See, I m learning so much ; )
New video ♥️♥️♥️👍. Thanks brother, great work!
Thanks so much for your support Seth! Be safe and have a good weekend 🙏🏼☺️
Delicious! Another great vid ❤❤❤
Thank you ❣️
Thanks so much for another great video. Your videos are helping me learn and refine various cooking techniques. They are also helping me gain a more nuanced understanding of flavor profiles in SE Asian cuisine. Although it seems like sweet, sour, spicy, savory, and of course aromatic elements are generally always present, I really appreciate how you talk about which flavors are forward in particular recipes. Keep up the good work.
I'm glad to hear that! I'm happy to share my love of SE Asian cuisine with you and others. Thanks so much for your support 🙏🏼
Wow! These are just my style of food. Perfect for parties too. 👍😁
So delicious..so calming. Curious how your intro warms the soul. Thank you for sharing and making this a lovely start to the day.
I'm glad that this could provide some calm to you on this day. Thank you so much for watching ☺️
Your video is clear enough for me to fully understood "Pad Mee Korat", thanks! Excellent!

Cant wait to try this!
I hope you enjoy it :)
This recipe is so simple...i saw another video of Pad Mee Korat which made a big deal of the entire process
This looks so delicious
One of my favorite noodle dishes!
I really like the pork belly element, fantastic flavour, another great dish. ❤️
Thanks so much 🙏🏼☺️
Gorgeous!
Thank you Tom! 🙏🏼
It's so easy to grow garlic chives. Stick a clove in some dirt and water. I love em. Thanks for this vid!!! Love your channel!
oh I'm going to have to try that! Thanks for sharing
Thank you for your nice recipe. I assume the recipe in the description box is for 2 persons (with a normal appetite), right?
Thank you! Yes this recipe can create 2 portions. I hope you enjoy
You have done jt again and again! Your videos are a work of art. It brings not only a sense of calm but a true appreciation of Thai dishes and culture. Thank you for bringing this to my life!
Thank you so much Stephanie for all of your support 🙏🏼 It's truly a labor of love and happy to share it with everyone
I would try it with pan-seared tofu instead of pork belly. Yummy. Looks delicious either way though!
Pan-seared tofu would be so delicious here and would nicely soak up a lot of this flavor too!
Another David Packman sendee here. Huge thai cook and this is lovely, will be trying it on Monday. My girlfriend is half thai and we smash out the bangers on the daily.
That's awesome! I hope you enjoy it. Feel free to adjust the flavors to your liking.
You need to make beef jerky lao style and sticky ricr
Can I substitute the pu-li rice noodles instead of the flat one?
Sure, give it a try. The cooking technique might be a bit different though. Thank you for watching!
Thanks for the reply
Is it okay to substitute the Healthy Boy brand with traditional miso?
I heard some people use miso or korean Doenjang paste. The flavor profiles are similar so I think it will work 😊
@@ThunThunChannel Thank you!! I can't always make it to the Asian market (135 miles away) but I got my local grocery to stock miso paste, so yeah, thank you!
I made this dish tonight following a different recipe. I wish I’d seen your video first. 😔 Mine came out not the best. 😭😭😭😭
I'm sorry to hear that! Don't worry, Pad Mee Korat and Pad Thai can be messy the first time 😊. After you make these noodle dishes several times, you'll learn how to cook them quickly and without a recipe, because you'll know the flavors you want and what you need to add to achieve that. Don't give up! Let me know if you have any questions
Great recipes!!!! Music puts me to sleep...not so great
