Thai Stir-Fry Noodles Better Than Pad Thai? (Pad Mee Korat) - Nin is Cooking

  • This Thai stir-fry noodles recipe I am going to teach you today is absolutely amazing. It's called Pad Mee Korat, and if you ask me, it's really better than Pad Thai!
    Same as Pad Thai, they are stir fry noodles. But the noodles used are not the same. The noodles used in this recipe are Mee Korat, which literally means 'noodles from Korat' (Korat is the name of a Province in Thailand). They also are rice noodles, but thinner than the noodles used for Pad Thai.
    And also, this Mee Korat recipe is a spicy Thai noodles recipe, as opposed to Pad Thai which is usually not served spicy.

    PAD MEE KORAT INGREDIENTS
    For 1 portion (1 person)
    ● 250g Korat rice noodles or Pad Thai rice noodles
    ● 2 Tbsp Cooking oil
    ● 1 tsp Regular black soy sauce
    ● 150g Pork belly, thinly sliced
    ● 1 cup Garlic chives, cut for about 1-inch
    ● 1 cup Bean sprout
    ● 300 to 400ml Water
    Korat noodles sauce (for 2 servings)
    ● 1 Tbsp Cooking oil
    ● 1 Tbsp Shallots, thinly sliced
    ● 4 Garlic cloves, peeled
    ● 6 Dried chilies
    ● 1 Cilantro root
    ● 2 Tbsp Palm sugar
    ● 2 Tbsp Fish sauce
    ● 3 Tbsp Tamarind juice
    ● 1 Tbsp Fermented soybean paste

    Wow. I never heard about that dish. For me I t’s definitely better than Pad Thai because it’s more spicy, not fishy (no dried Shrimps), pork instead of tofu and more salty because of the Tao Jiew. I will cook it this evening and add the video to my blog 👍🏻👍🏻👍🏻

    I like a little spice but not too much where I can’t taste the food, I don’t like the spice to overpower the food.

    I like phad thai, with the peanuts and dry shrimps, but I don't like tofu. And I like Phad mee korat, is more juicy and spicy. Both are very good.

    Hi Nin! If I am using Tamarind Concentrate instead of tamarind juice how much do you recommend to use? I have been cooking pad Thai for awhile, so am very excited to try this twist 🙂

    I tried this recipe yesterday evening and we liked it very much! It is really delicious. Thank you, Nin. I'll add this recipe to our dinner rotation.
    Btw the ingredient list states 250 gram dry rice noodles for 1 person. I used 200 gram dry rice noodles (and 300 gram pork belly) for 2 persons, which was sufficient. Are you such a big eater, Nin? 🤔

    Hi Nin,
    Thank you very much for answering my horapa fried rice question. It's very helpful.
    Now about this pad mee korat recipe: I noticed that in this video you used about half of the sauce, correct? Did you also use half of the other ingredients, like half of the pork belly (ca. 75 gram) and half of the dry rice noodles (ca. 125 gram)? I'm not a natural born cook, so without the right measurements I'm lost ;-)). Can you help me out here?

      I put everything in that pan. 🤣 But except for the sauce that I put in only half.
      The quantity of the ingredients is for 1 portion (for 1 person) you don't need to cut it half, except you want to eat just a little.
      And for the sauce, it can cook for 2 portions (for 2 person)

      if you already have the Pad Thai sauce and want to try this recipe, you should add some soybean paste. for the rest you can just adjust by your liking 😊🙏

    i have been struggling to find fresh bean sprouts, i have tried canned and they were a disaster. do u have a method of cooking canned sprouts to make them taste good

      Maybe you should drain it well, try to make it dry as much as possible then stir fry with tofu, minced pork and soy sauce. It's very yummy dish.
      But from what I know bean sprout is quite easy to grow, even with paper tissue and water. 🤗
