Pepper’s Korat-Style Pad Thai

- Mom is always in the kitchen cooking, which means we are blessed with authentic Thai food on a nearly daily basis. One of the kids' absolute favs is her Pad Thai. She can make it in literally 5-10 minutes with ANY ingredient, depending on what we have in the fridge - she’ll usually chop up and throw in some veggies, like onions or bell peppers, or add beef instead of chicken. BUT, the one thing that never changes is the sauce. She makes a regional (Korat style) Pad Thai that has a thicker sauce and is a bit on the sweeter side. We probably eat it at least twice a week for lunch or dinner (or even a snack), but it never lasts long - you might want to make a large batch to begin with!

Josefine Gustafsson They might look alike but they use different kind of the noddles. We don’t put eggs to Phad mhee ko rat amd it has less ingredients than Phad thai.
Pad Thai use tamarind as a main ingredient to making sauce and it must have a tofu and a Bean sprouts but depend on your recipe.

@@josefinegustafsson4364 So the ingredients is difference completely. also a kind of noodle doesn’t same. Pad-thai called the noodle is Seint Chan and in the Video called Seint Mhee Ko-rat. Mhee Ko-rat is the food from northeast of Thailand but Pad-thai from central of Thailand. Pad-thai is 3 taste in the 1 then sweet, sour and salty which Mhee Ko-rat is salty more than any tasty.

My grandmother used x number of dinner plates to measure out flour when she made bread. I can still see my mother trying to trsnslate that into cups ! Guess plates were faster ? Whatever the reason , her bread was killer good !
this is how my mom and my grandma cook. they said you don't need to really measure the seasoning, but you have to taste the dish. that's how you measure it!

The dark soy sauce is also called sweet soy sauce btw those who can’t find dark soy sauce at the market
For the soy sauce brand she had - they have both sweet soy sauce and dark soy sauce. Very tricky but I find it's best to have both in the pantry :)

That's why this dish is called Pad Se Ew 'stir fry noodles with dark soya sauce' you will never see any part of city in Thailand put dark soya sauce in Pad Thai. Little insulting to Thai cooking.
Dark soy sauce comes in several kinds and both sweet and unsweeted. There's a difference. Also in taste :)

I wonder if it is because asian cook focuses on how the ingredients are prepared. I’m always amazed how in asian cooking, it can make like a few dozens of different dishes with the same ingredients.

Pad see eiw (or thin soya sauce noodles) would not have any dark soya sauce in it.
This one her mom cooked is a kind of Pad Thai. It’s also called Mee Korat which is North eastern Thai style.
It’s not like typical Pad Thai as you can see from the ingredients are very simple compared to Pad Thai.
Pad see eiw always comes with thicker rice noodles and absolutely no spring onion in it, just Chinese broccoli.

I was stationed at Khorat RTAfb in 1974. I had a bungalow downtown near the SP Hotel and I used to eat at a restaurant across the street where the owner served wonderful Quiteal Nam soup, moo, and incredible Khow Paht. I look back on that time as a wonderful time in my life

Jackie Contreras pad see ew is so easy you don’t really need a lot of ingredients you just need the sweet black sauce(ce ew dam), rice noodle(sen yai), sweet soy sauce(ce ew kaow), galic, Chinese broccoli, eggs
The way she cooked is more Pad See Ew to me. Pad Thai would have tamarine sauce, fish sauce and palm sugar. We don’t put chinese broccoli but chives in there.

Pad see ew is so easy just buy soy sauce, dark sweet soy sauce, oyster sauce then stir the noodle with meat and vegetable(Thai Kale) or else you prefer. FINISH..

This is Phad-See-Ew. “See-Ew” mean the black thick soy sauce she put it in pan, so just follow the step in this clip. I would say that this is not the Phad-Thai at all. It should be called “Phad-See-Ew”

I’ve always loved Chrissy and now I adore her mama too. Beautiful, clever women. The people in their lives are so very lucky to have them.
