Chai Latte Spice Vegan Granola

    I have been making granola for years, and it feels therapeutic.
    I play around with different spices and ingredients. Now that we’re heading into winter, I wanted to start infusing more of my foods with antioxidants and combat inflammation as much as possible.
    Over the past year, I’ve tried working hard to have an anti-inflammatory food range, but it’s not always easy. Store-bought granola has a lot of added sugars and dried fruit, which inflamed my digestion.
    I can’t recommend it enough to take the time and make your own food. It does take part of your week and weekend but thinks of it as a form of self-love, like a massage and facial.
    Take some time this weekend and try out this recipe. I used a chai latte drink powder which turned out wonderful.
    Ingredients
    Granola
    2 cups of mixed organic nuts blended with some chunky bits
    3 cups quick oats
    1 tbsp chai latte spice
    1 tbsp vanilla
    1 tbsp cinnamon and spices
    1/4 cup rice malt syrup
    2 tbsp coconut oil
    water as needed
    2 tbsps flax seeds
    1/2 cup coconut flake sizing of your choice
    2 tbsps protein powder
    Tips
    Bake for around about 2 hours until the mix is crunchy
    You will need to keep an eye on it as it can slowly burn and turn rancid
    Add this yummy granola to your yogurt and fruit as a topper in your smoothie bowl (like I do!)
