- Welcome! Today I'm going to show you how to make the most delicious Puerto Rican Pernil (Roast Pork Shoulder) with this step-by-step guide. Measurements for roughly 5lbs of Pernil: (for a small crowd. Roughly 5 adult servings of modest portions). Roast for 30min at 350° for every pound of pernil, covered. Afterwards, raise oven temp to 375° and roast for an additional hour, uncovered.
• 5lbs lbs picnic roast, or pork shoulder
• 1/4 cup extra virgin olive oil, more if needed
• 4.5 tsp salt
• 5 garlic cloves
• 1.5 tsp black pepper
• 2 tsp oregano
• 1tsp achiote (annatto)
• 1 tbsp sofrito
• 1 tbsp white vinegar
Cuerito Seasoning:
• Sea salt, garlic powder, and black pepper to taste
Adjustments per pound: Roast for 30min at 350° for every pound of pernil, covered. Roast for an additional hour, uncovered, at 375°.
• 3/4tsp to 1tsp of salt per pound
• 1 garlic clove per pound, or 1/2tsp ground garlic powder per pound
• 1/4 tsp black pepper per pound
• 1/2 tsp oregano per pound
• 1 tsp vinegar per pound
• 1/2 tsp achiote (annatto) per pound, or Sazón
• 1 tsp Sofrito per pound (optional)

Thanks for this recipe I have never made one myself but I've always had one sent to me from my mother in Puerto Rico every year for the holidays. She would actually mail it to me but she is 91 years old now and it's hard for her to get around and I don't want her to go through the trouble so it's time that I learn how to make it.
