I love prawns. Gambas y ajillo are a match made in heaven for me and when we're in Spain or the Canaries, I will eat this several times.
Gambas y ajillo with a bottle of Rioja, watching the sunset is my idea of utter joy.
I'm not a huge fan of mushrooms (a texture thing), but I would make a small portion of them as I don't mind a few.
My ALL TIME favourite Spanish dish is when the gambas y ajillo are deep-fried in olive oil with slices of garlic and it's served in the hot pan and I have a small piece of bread to soak up the oil and slices of garlic. It makes me happy just to think about it.
Sadly, due to mine and my husband's health, we might not get away to Spain this year, but we hope to.
I'll just have to make this, instead!
