If you compare Stalkers to Roaches, Stalkers have: Blink, more range, and can attack air. The Roach's advantage is that it's cheaper. Of course Roaches are going to be more cost-effective than Stalkers in a head-to-head fight.
The stalker is also a shitty unit, it just has more utility, since it can you know, shoot up. I think the mvp in those army fights were the ravagers though, they do underrated damage.

pvp (or any matchup, Terran actually works best) 4gate glaive adept rush with +1 weapons at 5 minutes. No scout, skip the robo and proxy a gateway. expand behind the push and use hallucination from sentries to simulate an air attack at the same time. If it’s Terran or Zerg expand + transition straight into stargate / dark shrine to deal with roaches or break a turtle. Blink stalker all ins will kill you though. but it’s a fun build.
Should be 1 gate per 4 probe mining minerals. You had around 60 that is 15 gates. It was 9 when you realized it was not enough, floating 1.5k minerals. A templar archive for HT would be nice, or he could had keep producing oracles nonstop from his stargate and that can lower the required number of gates. I think the stalker army was too big that prevent it to fight effectively. Splitting it near the end was the right call. Almost looked like sc1 mass dragoon. Yes, you just need to flank from every side because your stalkers out-range and outmaneuver the roaches. Keep killing some and blink out, it is demoralizing on the receiving end. Also, prioritize shield upgrade over armor if you play blink stalkers, as you can blink the low shield units out it is almost always the shields that are tanking the damage. It also greatly enhance tanking when fighting under battery. Of course, triple forge 3/3/3 is better if economy allows, but 3/0/3 is usually enough if you do hit-and-run all day long and refuse to take hull damage, and you can add archons later to take advantage of the upgraded shield if the zerg switch to zerglings. Armor upgrade would be more effective on zealot and dt as they have more health than shields, and they can't disengage as easily.

For PvP why not just gate expand into a fast 3rd and fast 4th, win by forcing your opponents to fight into your defensive positions of get behind in eco, just not on the second base, on the third instead. Maybe even gate expand into fast robo for extra safety while you take your third?
