Today's cocktail is a classic from Brazil - the Rabo de Galo! This drink dates back to the 1950s, but didn't officially gain international recognition until 2023 when it was accepted into the International Bartender's Association (IBA). Originally, the Rabo de Galo began as a shot, promoting sales of sweet vermouth, but later evolved into a strong cocktail served up or on the rocks (the name translates to "tail of the rooster" or cocktail). Every bartender makes their Rabo de Galo a little differently - giving the drink a personal touch while leaving it open to debate. Man I literally got the chills watching this one. As a Brazilian, Rabo de Galo was one of the first cocktails I learned to make, and Mestre Derivan was a local legend. When he passed away the whole bartender community was sad. This is a beautiful homage to a man who taught Brazil how to take care of a cocktail and of his clients. He was such a nice guy. I was one of the chefs that helped open a Brazilian restaurant in midtown NYC. We had a cocktail consultant named Marcio Silva. He showed us how in Brazil they make pre-batched vermouth bases. Essentially they would mix 3-6 different vermouths to create incredible textures ranging from silky smooth to thick and robust. Very clever!

Being brazilian, I find the thought of high end places and properly trained cocktail artists making "rabo de galo" hilarious, cause my association is basically the grumpy old man with a dirty towel across his shoulder, which he uses to dry your glass (maybe justifying the "copo sujo" (dirty glass) term that we use to describe such bars) at your local "boteco" making "rabo de galo" to the same customers who live around. He also knows them and their families by name and everything, (picture the Simpsons moe bar, but dirtier). That's where I imagine a guy ordering and drinking a rabo de galo when I think about it.

Exactly what I thought
There's definitely something hilarious about it, but it's also beautiful, in how culture can spread and transform. Carlos Cachaça and Cartola wrote in "Tempos Idos" how the humble samba was carried forth by genius musicians and, victoriously, made its way into the highest circles of society. We could make the same case for the Rabo de Galo, and how it's now exalted and celebrated by people around the world, even on CZcams. Still, it's always important to remember and celebrate its roots, and also exalt the grumpy old men who prepared this drink to the people he knew as if they're his brothers and sisters.

the way Brazilians pronounce "r" like an English "h" really messed with me when all my roommates were from Brazil I remember I was helping one through an online job application where you had to record a video, his first take he said "I believe I am a good fit for this hole" and I was like "huh!?" trying not to bust my gut laughing, he meant "role"
H is the normal R sound in the beginning of words in Portuguese, BUT the guy who said HOLE instead of ROLE simply didn't study English or is a very lazy student. the American R sound is very easy to us, it is even present in the accent of Sao Paulo countryside, there's no excuse for this mispronunciation.
Brazilian R is the same as french R not spanish/portuguese R, it’s easier to think this way.

@@negljbreakergaming he's not that poor English student as you mentioned. 🤣 Our langugage is considered one of the richest in phonems, that helps a lot when learning a new language (the more phonems you are able to say, the easier to learn new ones). I find quite bizarre a Brazilian making this big mistake, and sure it's very rarely done because American R is a phonem already present in Brazilian accents. As a Brazilian I'd make fun of him non-stop until he quit his unjustified laziness. 🤣🤣🤣

Thanks to bring brazilian cocktalery to your chanel. Rabo de Galo is a cocktail very very common in "botecos" ( poor pubs suburbs in Brazil). Usually is only a mixing of Cachaça and Cynar and is just poured in the glass, not shaken or stirred, of course I will try yours recipe, looks great!

The best representation of Rabo de Galo that I ever see from abroad. The version with only Cynar is very common in some states of Brasil like Minas Gerais and I would not say that any brasilian would think to make a Rabo de Galo with another amaro. We had very heavy taxes on oversees products until ultil the 90's so Averna, Ramazotti, Montenegro were very rare. For a long time Brasil only had Cynar and Campari that were made locally.

Cynar is really cheap here, yo can find it as low as US$4,00, so there is almost a prejudice with Cynar outside the cocktail comunity for being the poor drunk guy choice.
I guess that shows how much of a mark up we pay in North America...
I was coming to say that! My Rabo de Galo's recipe (as a São Paulo's East Side resident) came from local bars. They usually have only a Cheap cachaça and Cynar in it. At home I like to use a Barrel-aged one, but stick to only Cynar and Lime. Don't feel the need for a Vermut on it ❤
A couple of parts charisma, a part history and storytelling, a part clear instructions and demonstration, and put it all in a relevantly sponsored vid. Very enjoyable, easy watching with fun notes and a a lingering desire to try a new drink.
Nice! Also, Rabo de Galo is served a lot in what we call "botecos", which are kinda more "shabby" cheap bars all over the coutnry and they often serve it in a "copo americano" (american glass, though it is brazilian), which is a very popular glass in brazil. It is a true classic.

@@vitorf2303 not really. It was produced by Nadir Figueiredo since 1947 using imported machines from the USA, which is why they called it americano. It has a design similar to a glass known in the US as "soviet glass", but although the model is similar (not identical, the soviet glass is in fact bigger) there is no evidence of a direct connection.

There is also Macunaíma, another very very good brazilian cocktail (imo it beats caipirinha by a lot)

@@JanjukvonLowangen I really like this one, it feels like a Caipirinha with more complex notes given by the Fernet. It also has a traditional way of serving, which is shaken, straight up to a small glass called “barriquinha” over a napkin folded in half

Mestre Derivan was the best teacher I had, an amazing and charismatic figure who left us way too early. He raised the standards of the cocktail to an art form, about taking care of eveyr detail, the costumers, the ambiance and everything... The guy was such a legend that he managed to put the 2 most common brazilian cocktails into the IBA, before that even most brazilians had a perception that cachaça was a beverage for poor people, many brazilian expensive restaurants and bars didn't even had cachaça on the menu or had just one brand for caipirinhas... Derivan proved that this could be appreciated world wide and after him everyone went after how to make good caipirinhas and good rabo de galos...

In Southern Brazil my father took me with him to a lot of "cancha de bocha" (bocce cort), where no one plays bocce, but everyone drinks.
His favorite drink was Eu me Odeio (I hate me), simply tonic, tar brandy and lemon.
Great for hangovers, but then became his habitual one, for his habitual hangovers 😅
His liver still works, so I guess this works well.

Mas eu me lembro do pai com uma garrafa de tônica junto, que ia colocando no copo com cuidado à medida em que tomava. Copo americano, metade de licor de alcatrão, espreme o limão e despeja a tônica na hora de tomar. Ela espumava, então ele ia colocando e tomando ainda espumando. No final, tu deves tomar só a tônica pura, porque o licor já foi.

@@kinezumi89A parallelogram is a four-sided figure (quadrilateral) with two pairs of parallel sides. A rhombus is a parallelogram with the additional constraint that all sides have the same length (unlike Tennessee and the garnish in this video).

I just made this one with Costa Rican rum (Cacique), sweet vermouth, and Amaro Lucano. It's really good over a big block of clear ice. I used 2 oz. of the Cacique, because the proof is limited to 60. Thanks for posting. Dang I love making cocktails!

When I finished college I started working in a union. I drove a VW Kombi to make visits to where the affiliates worked and sometimes had lunch with them in very simple bars or restaurants. It was common for those workers to have an aperitif before the meal, a "rabo de galo" made with cheap cachaça and Cynar or another bitter drink. This was in the early 2000s in Curitiba, southern Brazil. It's really cool of you to tell the story of this drink that is so popular here in Brazil. And what a beautiful "caramel doggo"! congratulations on the video!

A quick thing about Cinzano: Brazil got massive Italian immigration from 1880 to 1920, but since they got here, the cultural costume to drink Vermute was getting lost to the next few generations (we didn't have any expressive national production). When Cinzano came, the scene was kinda lost. That is why they needed to break a new dirnk as a form to sell and promote the bottle again.

To answer your question, I have been told that Europeans, especially Italians, frequently consume Vermute in various forms, either as shots or in mixed drinks. However, this isn't common or particularly enjoyable for Brazilians. For our taste, we typically prefer drier or less flavorful beverages, such as cachaça or vodka, which we often mix with fruits to create the cocktails. Vermute, for instance, is sweet and robust.

I love this drink. I had it last year for the first time beach side in Copacabana. I usually go with Negroni-like specs(see below), though next time I'll try it this way and see how I like it!
1.5 oz. Cachaça (currently using Novo Fogo Colibri)
1.5 oz. Sweet Vermouth (whatever I have on hand)
1.5 oz. Cynar
Stir with ice and strain into lowball glass with a cube. Garnish with orange peel.

How great is this video! 'Rabo de galo' is a traditional drink in the corner bars of my town in São Paulo state, and we use the most popular cachaças like "pinga 51" and "O velho barreiro". Long live the old!!!
