      Sad to know that
      Possible reasons
      1. Dough was not proofed
      2. Dough was kneaded smooth

      Thank you for responding. I proofed the dough for 2 hours, then proofed the pita breads for a further 30 minutes, as per your instructions. They bubbled a little but came out flat and crispy and tasted good. I’ll give it another try!

      @@valeriebike Thank you for sharing that. Did the dough double in size after proofing? Increase in size basically means air is trapped inside.. Which needs for puffing. Try a small batch again next time 😊

      @@glutenfree-guiltfreeJust after I hit “send,” it occurred to me that the dough didn’t really double in size. Does this mean the yeast mixture was too hot? Too cold?

      @@glutenfree-guiltfree Now that I think of it, I don't think it actually doubled in size. I'll try again and hope for nice puffy ones next time! Thank you!
