Yes, they freeze wonderfully (for up to 3 months). Or you can store them at room temperature for 1-2 days.

This is one of the things I needed to know how to make bc our store bought ones contained milk. My daughter has a dairy allergy so we are all going non dairy. We are getting ready to have more testing done for Celiac disease. So need to get some recipes and things i can make for her/ us 💝

Hello Nicki, I followed the recipe however the dough was very sticky (it was sticking to my fingers) and it was very difficult to work with even though I floured the parchment paper and the dough. I attempted to cook the flatbreads however no matter how long I cooked them, they were always uncooked inside. Would you be able to tell me how I could make the dough less sticky?
I do not use a scale and all of the flour was lightly poured into the measuring cups. Should I reduce the amount of coconut milk? Thanks!
Can you use the sorghum flour and/or the millet flour as a replace for the Gluten Free four and for the almond flour -use coconut flour instead?
Hi there! I haven't tested the recipe using those substitutions, so unfortunately can't give you a concrete answer. I do think the xanthan gum in the GF flour mix is important for the structure of the flatbreads, so swapping that out will likely result in a much more tender texture (the flatbreads might not hold together as well). Let me know if you give it a try!

Hi there! I don't count calories or macros. For me personally (and this is just my experience, not a judgement of any kind!), I don't like reducing foods to numbers, as it diminishes my ability to tap into and trust my body. ❤️

Hi Sharon, although I haven't tested it, you could try cassava flour. I suspect the flatbreads won't be quite as tender, but I think it would be your best bet. Let me know if you give it a go!

Hey, love the recipe. I'm allergic to rice so can't use gluten free flour, is there any other replacement? I'm also allergic to gluten so it's pretty difficult as most gluten free products have rice 🙃
Hi there! That does sound like a struggle, since so many GF flours contain rice. I feel for you! Are there flour blends that you can use, or do you usually stick with nut flours?
Have you ever tried cassava flour? That's good for flatbread recipes so I bet it would work well in this one.

Try a mixture of soy flour, buckwheat flour and oat flour (30% soy 30%oat 30% buckwheat) . Works wonders for me
Maybe Quinoa flour...?...i never tried it though...

Hi there! Unfortunately coconut flour isn't a good swap, as it retains much more moisture than almond flour (the texture will therefore be much different).
