  • Mission: Fresh Food Friday introduces the ECU community to simply prepared, healthy foods and their nutritional facts at various locations on campus. A well-being ambassador demonstrates how to quickly prepare a snack at home.
    Ingredients:
    -1 cup oats
    -2 tablespoons chia seeds
    -¼ cup ground flaxseed
    -A pinch of sea salt
    -½ cup almond butter
    -¼ cup honey
    -¼ teaspoon cinnamon
    -½ teaspoon vanilla extract
    -¼ cup dried blueberries
    -¼ cup sweetened coconut flakes
    Steps:
    1.In large bowl, combine oats, ground flaxseed, chia seeds, cinnamon, and salt.
    2.Heat almond butter in the microwave for 20-30 seconds or until slightly melted. Stir until smooth.
    3.Add honey and vanilla extract to the melted almond butter. Stir until smooth. Pour over the oat mixture and stir until well combined. Stir in the dried blueberries and coconut.
    4.Roll the mixture into small balls, about 1-2 tablespoon per ball. Place in an airtight container and keep refrigerated for up to 2 weeks until ready to eat. "
