  • Mission: Fresh Food Friday introduces the ECU community to simply prepared, healthy foods and their nutritional facts at various locations on campus. A well-being ambassador demonstrates how to quickly prepare a snack at home.
    Pumpkin Bread
    Ingredients:
    1 ½ cups of pumpkin puree
    1 1/2 cups of salted butter
    1/2 cup of brown sugar
    1 cup of granulated sugar
    3 Eggs
    2 cups of all-purpose flour
    Pumpkin pie spice (amt as desired)
    Steps:
    1. Mix the pumpkin puree and melted butter.
    2. Add sugars and stir or whisk until the sugars are dissolved and the mixture is uniform throughout.
    3. Add eggs and stir until thoroughly combined. Add dry ingredients.
    4. Grease a loaf pan and pour batter into the pan.
    5. Bake at 350 degrees for about 1 hour.
    6. After baking let the pumpkin bread cool for 1 hour.
