    My mother when I was growing up many years ago would purée garden veggies like zucchini and yellow squash and add to sauces like spaghetti and we never knew it. It was delicious and we got our servings of vegetables.

    Quick story, growing up, my mom would make split pea soup
    on rainy, cloudy days, in an old 70s crock pot…it had big brown flowers on it🥰
    The first few times, our power went out. Coincidence?🤔
    So from then on, we pulled out flashlights and candles before she’d start making the soup!!

    Just two of us, so I am not doing the challenge. But I did can 10 quarts of tomato juice for my daughter. I dried herbs, made red raspberry jam. I collected elderberries and put those in the freezer for future syrup. I also defrosted the big freezer and reorganized. Productive week.

    I agree that I could watch a video of yours everyday. I find them informative, because I learn something new with every video. But also they are so incredibly calming. When I have over stimulating days (nice way to say stress filled😊), I go back and watch your older videos. I hope that you get credit for it. 😊

    When we make Sloppy Joe sauce, we can half as normal and then add taco spices to the rest and can it as Messy Jose sauce. They’re a great alternative to a sloppy Joe or a taco. It’s like a hybrid of the two! ❤

    The silicone garlic pealing tubes are such a game changer! You literally put a piece of garlic in it, roll it and it comes out peeled! It's quite fun, i'm sure some of your younger children would enjoy using it!

    Going into the final week, I needed some inspiration so thank you. ♥ Last week we did our first ever beef tallow, beef stew, canned beans and some seed saving. It was a very productive week, I am so thankful you push us all to preserve more. 👍

    I love savoy cabbage cooked with carrots, potatoes . I boil everything til almost tender, then drain the liquid. I add garlic, onion and olive oil to a pan and sautéed. Then add the cooked veggies to your liking. I like them to have a golden brown color. Thank you so much for an awesome video. Have a blessed day.❤

    I also dry my celery leaves to use in soups. I find they are a flavor bomb, and we love the flavor but don’t always have fresh celery on hand.

      You used to be able to get celery flakes in the spice section when I was a kid. It was great to add to soups. Haven't seen it for sale in years

      @@veronicavatter6436 I find it very easy to grow in buckets. It’s not like grocery store thick stalks but maybe that’s because our growing season isn’t as long as some but, the amount of leaves is amazing.
      It’s so useful and easy I really recommend giving it a try!

    Thank you! I have a family member in my house who is allergic to pectin and citrus. I will finally be able to prepare strawberry jam for her. Store bought jams and jellies are out at my house, as is all dairy. LOVE THIS CHANNEL!

    It always produces awe in me when the Lord speaks into even the smallest things in our lives through others. It has often happened that He has done that in my life through you. I had the same struggle with garlic and He just used your experience to bring a solution to me. Thank you for being willing to let Him work through you. You're a blessing and a fine example of that Proverbs 31 women to those of us have a desire to please the Lord in that area of our own lives. ❤️

    Garlic: I, as an experiment, took all the cloves off the bulb and threw them into a ziploc bag and froze them. I just took some out the other day and let them thaw for a couple of minutes and then cut the tiny connecting point off and the skins just came right off. I'm so excited! This is a game changer for me.

    I'm still over loaded with last year's canning of tomatoes. But I will be writing down the Sloppy Joe's recipe for sure. I only planted 7 tomato plants this year. Next year I'll plant a bunch again.
    I did manage to make tomato soup for the canning shelves.
    I keep testing to see is my candy roaster squash is ready. First time ever growing it. We will have a wonderful bunch of them.
    Sweet potatoes are ready to dig tomorrow! Dug the first one today and wow! For it to be so dry they sure are huge! God is good!
    You are an inspiration to all of us! What an example for us to follow!
    I would also watch you every day!❤

    Thanks for hosting this challenge...you've inspired me to not only participate but also to share on my channel the fruits...and other canned goods during this challenge. I had to do a total remake of my "pantry" room to accommodate all the canning I've done. I'll be sharing the "make over" on my channel at the end of this challenge. First I've got more canning to do and the tomatoes aren't even ripe yet here in northern Michigan.

    Something else I will add to my Strawberry jam is a grated apple. It has loads of pectin in it and makes the process a bit quicker. I’m sure even freeze dried would work really well. My family has never noticed an “apple flavor” and you can see it once cooked down. 🙂

    Thanks for the comment about the separation during canning. I had this happen last year (the first year I canned). I had to check Google to figure out if I had a problem or not.😊 I think this happens mostly with tomatoes products.

    Such a productive week. This time of year my fruit trees and garden explode and I feel a little behind. Freeze dryer, pressure canner, dehydrator and water bath all going. I’m fast approaching 66 on September 3rd and still running my own business. Energy levels are not like they used to be so I’m learning to give myself some grace. I have done rather well with this challenge and feel as if I’m getting a weekly pep talk. Every bit really does count. Thank you

    Thank you Jessica! ❤ if you have extra milk and sugar you can make Dulce de Leche, similar to Caramel, it's the argentinian tipical canned caramel. It's a water bath project due to the amount of sugar. It's perfect for bread, cake filling or whoopies (Alfajores).

      That sounds delicious. One of her children is allergic (anaphylactic) to milk. It would be interesting to see if she could figure out a way to use a milk substitute.

    I have been using the food processor for onions lately too. It is so much easier. My eyes thank me! I also use the ball recipe for sloppy joe sauce. It is really good! I hope all is well with your pregnancy and children. You are a great momma to them.

    Started cooking fatty beef short ribs on Friday got the broth in the fridge on Saturday and canning it today. Going out in the garden and get some herbs for the dehydrator after the canner comes to pressure.

    There is no need to warm the water when soaking your garlic the aim is to rehydrate the skins to soften them ....and the longer you soak them the better

    I make Cabbage with onion and bacon or ham. Are even hamburger. A very delicious meal and you can add noodles or potatoes. And this truly is a low cost Meal. . This is a old german russian recipe that I learn from my Family. Great video. You been very busy. God bless you and your family.

    I've been preserving a lot of herbs this month since our garden spent early this season. I did can up a bunch of chicken soup with tumeric and beef veggie soup for beef and barley soup. I love soup in winter.

    Jessica, you do an outstanding job for your family. I am 62 y/o and do some canning, but my kids have kids of their own. So it is just me. As a young mother, my hubby and i both canned and froze anything we could. The Lord blessed us with 2 children, but them and us, could put it away.

    I am so proud that this week, for 1st time since I started to follow the challenge, I was able to prep and put away, every single day! As Jessica talks us through this week, I am cutting up onions, red/orange peppers, and garlic from my garden, then I will cut up 12 c. of cukes from my friend, and I will make Chicago Style Sweet Pepper hot dog relish!     Hi, Jessica.I hope you and your family are doing well. So just like you i too hate doing garlic. I have realised a neat little trick.What I do is I take the garlic i need to peel for the day.I put it in a cup with some water and I put it in the microwave for a minute or 2 and after boiling in that hot water for a minute or 2 that peel slips off super easy, it's even much better than just soaking it. It needs to go in the boiling water for a minute Or 2, it's been a real tome saver

    On this challenge, one of the things I did was to put up a large amount of homemade dry laundry soap.
    Jessica, I'm giving your idea of red wine vinegar a whirl, and hope I have success; I also did some fermented pickles.

    I made tomato pesto but it came too runny. I put mixture in strainer. Hey I thought that liquid is still usable. I poured the liquid into ice cube trays. I can thaw and drizzle liquid over pasta,or add some olive oil for salad dressing. Everybitcounts! 😊 Thanks Jessica for the challenge,we will enjoying good food this winter

    I was going to comment on the last few videos and just haven't had the energy . You started the challenge at the worst part of my pregnancy (morning sickness)and couldn't imagine doing anything. I have a garden full of produce just wasting away. Its been so hot where i live that i just cant stand it( normally doesn't bother me at all). However, I've still been watching every sunday and last week helped remind me that we needed to do pickles. My daughter did most of it(it was her project she has been wanting to do for a couple years). It worked out great. You are inspiring me to make some meals in a jar for end of pregnancy (thats where i struggle getting food on the table the most). But im going to have to feel a little better and its going to have to cool down some! Thanks for the inspo!

    I look forward to your Sunday videos, thank you for taking the time to do them!
    My way of doing garlic is getting 2 larger bowls, one on top of the other to enclose it. Then SHAKE! it gets 90% of them. Just make sure you have enough room for them to move around. I use smaller ones when I only have 4-5 cloves for a meal.
    I had an idea for a possible future video (or a small section). You sometimes show us your meal plans for the week. I've been in a meal plan slump recently, and I'd love to see a collection of your old plans, even if it's just so we can screen shot it lol it's hard to find ideas when you have multiple allergies to account for, and other than eggs you have great ideas to accommodate!

    Thank you for explaining things. Not everyone knows the science behind blanching. Also, I didn’t know that you need to dry the food before vacuum sealing to keep ice crystals from forming.

    I appreciate the opportunity to follow you from my home here in South Australia. I pray for you and the family like I do with others I hear about and friends as God leads me to pray. As you are expecting another blessing and my daughter-in-law is due in early November with my first granddaughter, I'm also now praying that you both have easy pregnancies with your new additions

    We used pickled garlic sliced up in our green salads. To feed off your idea for dressing- I also usually pour a bit of the brine over the salad as well. Even if that's not the only dressing we use- it always compliments whatever else we add. Oddly enough- it's REALLY good with homemade ranch.

    Have you tried adding one teaspoon of chia seeds to your jams to replace gelatin? It works wonders while adding a little nutrition! Thanks so much for your videos. I knowcits a lot of extra work for you. Bless you and your house for sharing!

    I'm 80 years old and peeling garlic is difficult for my Arthritic hands. I discovered years ago An easy way To peel it. I use a large can of tomatoes, Or peaches, etc., on ea. Clove of garlic. Slam the garlic with the can on the Cutting board. The garlic releases the peel and you can reach down and pick it right off the clove of garlic. The garlic is crushed and ready to cook or mince. It's a miracle! and it works every time.

    Mix your organic mustard with honey...makes a nice dressing or dipping sauce for chicken nuggets or just veggies like cakes, peas or tomatoes...
