  • Mission: Fresh Food Friday introduces the ECU community to simply prepared, healthy foods and their nutritional facts at various locations on campus. A well-being ambassador demonstrates how to quickly prepare a snack at home.
    Bacon/Facon Ranch Bell Pepper Poppers
    Ingredients:
    -1 package of mini bell peppers, cut in half and deseeded
    -1 8-ounce package of cream cheese
    -5 strips bacon or vegan bacon/facon, cooked and chopped (alternative: bacon bits)
    -1 cup shredded cheddar cheese
    -1/3 cup mayo (may sub with plain greek yogurt)
    -2 tbsp ranch seasoning mix
    Steps:
    1.Slice peppers in half to remove seeds and ribs.
    2.Place cream cheese, bacon, cheddar cheese, and mayo into bowl.
    3.Stir to combine.
    4.Spoon the mixture into the pepper halves. Place in fridge for at least 30 minutes.
