  • Mission: Fresh Food Friday introduces the ECU community to simply prepared, healthy foods and their nutritional facts at various locations on campus. A well-being ambassador demonstrates how to quickly prepare a snack at home.
    Frozen Yogurt Bark
    Ingredients:
    - 1-2 cups of vanilla yogurt of your choice
    -1 Tbsp honey
    -2 tsp lemon juice
    -Blueberries
    -Raspberries
    -Strawberries
    -1/2 cup of granola
    Steps:
    1.Line baking sheet with parchment paper.
    2.In a large bowl, mix vanilla yogurt, lemon juice and honey. Whisk until thoroughly combined.
    3.Transfer mixture onto baking sheet and spread evenly.
    4.Top the yogurt with your favorite berries and garnish with granola.
    5. Place tray in freezer for 2-4 hours.
    6. Enjoy!
