LOADED LENTIL FRIES! (CHEAP VEGAN MEAL)

- Chakra loaded fries
Servings: 6-8
Ingredients:
1 cup of lentils soak overnight (for easier cooking just buy canned lentils, 2 cans should be enough)
6 Gold potatoes
2 sweet potatoes
1 red bell pepper
1 green bell pepper
½ onion
4 cloves of garlic minced
1 tbsp chili powder
1 tbsp smoked paprika
½ tbsp. onion powder
1 tbsp cumin powder
2 tbsp tomato paste
1 diced adobe chili pepper (optional)
1 bag of follow your heart cheddar flavor vegan cheez
chopped green onions for garnish
Directions:
Cook lentils according to package set aside
If using can drain cans and set aside
Bake fries first!!
Peel and chop potatoes and sweet potatoes into fry wedges
Pre heat oven to 425 degrees
In a large bowl with all the raw potato fries begin to add 2 tbsp grapeseed oil
1 tsp of sea salt
1 tbsp of Trader Joe’s Chickenless seasoning

once seasoned well by using your hands to get all the flavor and oil over the raw fries.
Clean off your hands and then place your fries in the oven for 25-30 mins or until golden brown
While fries are baking get ready to create lentil taco meat topping
Grab a sauté pan put on stove on medium high heat
Now add 2 tbsp of grapeseed oil to pan
Add onions and garlic allow to sauté for about 2-3 mins
Add peppers sauté for about 5 more mins
Add spices and sauté some more mix it all well
Add adobe pepper
Add tomato paste
Mix well and then add drained lentils
Mix well add more salt or spices to liking, you can add a little brown sugar if you like a littler sweetness
Once fries are done remove from heat
Keep oven on
Now place fries in a casserole dish
Pour lentil over the fries
Add vegan shredded cheez
Place back in over for about 8-10 minutes or until cheez melts
Remove and turn off oven
Sprinkle green onion for garnish and enjoy with loved ones!
