I have been printing my pla in my k1, full enclosed and have the side fan on and all my prints big and small have printed beautifully.

My ender 3 has direct drive (no new extruder or anything just a kit to change the position). It has a big problem with under extrusion. What do I do?

Increase the flow multiplication in the slicer or change the e steps with pronterface if you didn't change anything with the extruder except making it direct drive this will probably not help but you might have a clogged nozzle or partially clogged also ptfe hotends like on an ender 3 can only be used up to 240 c or the ptfe tube will degrade and could cause under extrusion if there's ground up little bits of filament on extruder gear it's grinding the filament and this will cause under extrusion increase or decrease extruder tension I really don't like ender 3 extruders I would recommend replacing it with something dual gear if non of this works

I have to max out temps on bed and print nozzle to get pla to work.

Hmmmm..... I haven't seen that on mine or elsewhere. You might want to double-check your filament settings, make sure it's not set for the Hyper stuff. (I assume you double-checked it's actually PLA... I did that once and it was PET-G... yikes!). Otherwise there's a lot of things to check, like clogged/damaged nozzle, PTFE tube not seated/cut correctly, etc. If you keep having issues, check out forums and social pages, and/or contact Creality. Good luck!
