    I don't think I've ever seen anyone make cream cheese. Very interesting. I'm sure it was tasty

    Oh, hey... If you ever pick up an air fryer, you can make that potato bake dish in about 14 minutes. I use one to make tater tots all the time.

      You're right, I should have mentioned that! I have an air fryer and it makes the best tofu! It's just not pratical, carrying it to the studio. I might get a second one ha ha

      The old one is better than this healthier version! I'm still trying to get the perfect pancakes while avoiding oil ir butter, but that's no easy task 🙂

      @@BeetTheRush Nothing wrong with butter. Your grandparents and their parents and grandparents ate butter. Lots of butter. Your body knows what to do with it, no problem. Butter is magical, enjoy!

      Actually, between World War I and II, plus a nasty dictatorship, I'm pretty sure none of them could afford butter, my father remembers as young man trying butter that came from the USA in big containers! But I know what you mean ( just sharing some "Portugal was really poor and underdeveloped " trivia because no self respecting portuguese person would miss the opportunity to complain ha ha ). The truth is I got it into my head I would invent those pancakes and I'm stubborn as a mule! Ha ha

      @@BeetTheRush I read you loud and clear. I grew up truly poor. We didn't get butter either. We rarely had sufficient food. I guess I'm over-compensating now.

    I think it's so funny how many recipes you manage to add peanut butter to Sofia. The variety of nuts, and seeds is impressive and shows how your recipes have developed since the early days of being a vegetarian. I'm going to circle back and watch this again as there is a lot to take in. I prefer to memorise a recipe first before I start. What happened to beetmas?

      Hi friend, thank you so much for your question, it gave me an opportunity to reflect on what's going on. There's a bit of an emotional dump coming, so please don't read the remainder of this comment if you feel it will bother you!
      Here's what happened to Beetmas: It is no secret I struggle with mental health issues, I'm in treatment for ADHD and Binge Eating Disorder, which has helped a lot but we're going through pretty hard times at work (my entire team) and the stress got to me. And with the war and economic crisis, I can't just quit. With all that comes impulsivity (RIP my money, my hair, and my stomach), procrastination (I have lots os recipes filmed, can't sit down to edit) and fixation (wich explains the repetition of ingredients, peanut butter being one of them). I decided to post 7 videos for Beetmas this year, with 5 recipes each, but it still proved to be too much for me right now. I considered quitting CZcams altogether this week, I'm still not sure I'll keep going. I decided to just keep posting whenever I'm able, even if that means the remaining days of beetmas have to be posted in January. I'm doing my best, taking my meds, staying positive and being as kind to myself as possible. Better days will come.

      @@BeetTheRush Binge eating......I'm fighting to lose the 25 kgs I put on this year. What makes it difficult is that with you, I always know when you are in trouble. You just battle on through, like nothing is going on. For now you should just do 1 full video a week and one short. And try to stick to the core values of your channel. ..fresh fruits, vegetables, nuts, grains, seeds and pulses, with creatives twists. Take us for walks in your garden again. Don't worry about beetmas.......just concentrate on Sofiamas.
