How To Prepare Jollof Rice (Ghana Style)

  • Preparing Jollof rice with the Ghanaian method.
    Ingredients in this recipe for 4 Adults:
    4 cups of rice
    8 pieces of Chicken thighs and drum stickes
    3 large onions
    Pepper, garlic,ginger (amount optional)
    Chicken seasoning/ seasoning of choice
    2 cups mixed veggies
    1 can Tomato Plumps &Tomato puree
    Salt to taste
    Maggie cube( optional)
    Procedure:
    1.
    Prepare chicken, wash and pat dry.
    Add salt to season
    Blend some onion,ginger, garlic and pepper
    Add to the chicken, add chicken season if you want.
    Steam the chicken for about 8-10 min.

    Blend plump tomatoes, with some onion and pepper depending on how spicy you want your jollof.
    Slice the remaining onions into medium sizes.
    3.
    Start making the stew or gravy by frying the sliced onions in about 3 table spoons of veggie oil and allow to cook for about 2 mins
    Add 4 tablespoons of tomato puree and keep stiring for about 8 min till it is reduced.
    Add the blended tomato mixture and allow to cook and reduce for about 10 more minutes, Stiring intermittently.

    When the steamed chicken is ready, strain out the stock and allow to cool.
    Deep fry chicken for the golden brown crusty finish.
    Put the fried chicken aside.

    Add the stock to the stew and allow to cook for about 5 minutes
    Add your chicken to the stew( optional as chicken can be served separately when the entire meal is done).
    Add the mixed veggies and cook for a couple of mins.( scoop some stew out if prefered to be served with jollof later).
    Add the rice and reduce the heat to very low. Cover the rice with kitchen foil and allow the food the steam through.
    Check and keep stiring intermittently till rice is cooked through, about 20 min.
    6
    Scoop some of the rice in a small bowl and press to form a nice mould, turn into your serving plate. Add your chicken.
    Can be served with salad ,gravy,coslow etc.
    Enjoy your meal.

      there's just a bit of a rivalry when it comes to jollof, as in who makes better jollof. Jollof is srs bznz in west africa lol

    Each West African country has its own way of cooking Jollof rice. I love both Senegalese theibou dienn and Ghanaian jollof. Let's accept & enjoy differences in local taste :)

    By the way in Ghana where we are from another part of the jollof which siblings will fight for is the under of the jollof - which is usually a tad bit burnt (not black burnt but golden brown burn) and very crispy to chew, we call it " Jollof Shishi - shishi in ga simply means bottom. :) - if you serve me jollof and you dont include that i wont eat it. ITs like the icying on the cake for me. Even the process of scraping the bottom part gives me happy goose pimples. i love it. i love your videos and recipes

    Watching this in 2020 has reminded me how Nigerian jollof 🇳🇬cooking process has changed over the years and now the majority of Nigerians cook it similarly to that of the Ghanaian jollof 🇬🇭 process, thanks to CZcams 😁. 7 yrs ago the cooking was different.

    I have been craving Jollof rice lately. Back in grad school my dear friend Theodora use to make large pans of it for me to freeze and have whenever I wanted. It was so good. She didn't add meat and it was still delicious. I don't like it too spicy either.

    Thank you, I'm going to try this recipe today with beef instead of chicken.. Ive tryed this recipe twice before and i did not suceed.. rice was not all the way done first time so i will pre boil it for about 6-7 minutes before adding to the stew

    Have made this for my half Ghananian husband....its smelling amazing but I couldn't get the chicken super crispy when I deep fried it, but hopefully he will love it anyway :-) very clear instructions I enjoy all your recipe videos
