TASTY GHANA JOLLOF RICE RECIPE WITH FRIED CHICKEN | PT2

  • Hello everyone, welcome back to my channel this is part two of the recipe, I hope you have watched how I fried the best Ghana style chicken (pt1) This jollof recipe is so delicious and will be your favourite!

    Ingredients:
    Fried chicken oil
    2 sliced medium size onions
    In the blender: 2 scotch bonnets,7 garlic cloves, 1 large onion, 2 pieces of ginger, 3 red pointed chillies or 1 1/2 red bell pepper, with 3 cans of plum tomatoes)
    1 tomato paste/puree 200gr
    1 /2 sankofa stew and gravy seasoning
    3 bay leaves
    1 Rennie chicken seasoning
    1 tbsp smoked paprika
    1 Rennie jollof rice seasoning
    1 tsp curry powder
    1tbsp Rajah chicken seasoning
    1/2 tsp nutmeg powder
    Salt to taste
    Chicken broth
    11-13 rice cups (fragranced rice)

    This recipe I tried yesterday dear hand on heart was the best Jollof I ever made!!!! 🔥 🔥 my family is already requesting a huge batch since yesterday!! 😂 So thank you so much dear!! I think where I was going wrong before was lack of seasoning of my stew base because sometimes I'd taste it and it will be well flavour but by time I add rice and cook it would be abit bland! So definitely think with making big pots of rice you actually have to season very well like you did so can taste nice and flavoursome after cooking rice! But yes dear 10/10!!! Thanks again!! :) x

    As a Caribbean woman married to a Ghanian man, the rice dishes have proved difficult for me. From watching this have realised I don’t allow the tomatoes to reduce down enough…will try your recipe and let you know 🙏🏾

    You should try making kabsa if you'd like to explore Arabic flavors, it's similar to Ghana Jollof but a bit dryer and with more tangy flavors, and there are so many varieties, my favorite is maqluba which is with chickpeas and soft potatoes with the rice and chicken.

    How much rice should I use if I want to make half the amount of rice ? Should I just half all the ingredient measurements? And what heat do you keep the rice on when your leave it with the foil?

      Hi dear, you can also use half of the rice. I used about 11 rice cups, but then use half of all the other ingredients, I cooked it on medium heat to low as it can burn very quickly
