    For the stew
    4 fresh tomatoes
    5 large onions
    5 shallot
    11 red bell peppers
    3 scotch bonnet pepper
    Oil for frying'
    10 garlic cloves
    3 thumb size Ginger
    2 tspns Curry powder
    5 tspns thyme
    8tspn white pepper
    3 tblspn smoked paprika
    1tspn salt
    2tspn all purpose seasoning
    For the meat stock..
    Goat meat 1500g
    2tspn thyme
    2 tspn Curry powder
    5tpn chicken seasoning
    2tspn all purpose seasoning
    5small garlic cloves
    2 tspn cloves
    1thumb size Ginger

    2‱ Why did you wash the rice with salt?
    Answer‱‱ This is a practice I picked from my grandma, and for real I find it to help remove some of the surface starch and prevent clumping. Parboiling the rice until it is al’dente is one known way to remove starch from rice but except you’ve done that a couple of times and mastered how fast it takes to get to that point, you may overcook the rice hence I find this method ( washing with salt and warm water ) easier to achieve the goal.
    TIP** Cosher salt will do a better job than the fine salt.
    3‱‱ WHERE DID YOU GET YOUR BLENDER FROM AND WHAT IS THE BRAND?
    Answer‱‱ The name of the blender is called AAOBOSI , and I bought it from amazon. The last time I checked, this item www.amazon.com/dp/B07J4N9X4R/ref=cm_sw_r_wa_api_fab_iguDFbQM0MMS8 is no longer available but I’m sure you’ll find something similar.

    Answer‱‱ I did that to help retain steam in the pot. The steam helps to cook the rice without adding much water.
    6‱‱DOES ADDING BUTTER TO THE RICE CHANGE THE TASTE? AND IS IT DETECTABLE?
    Answer‱‱ It doesn't change the taste and it's not detectable in a bad way , it adds a rich taste to the rice and then again It gives it some shine.

    Thank you so much for showing me how to cook jolof rice perfectly. I am Zimbabwean and have loved jolof for 18yrs but never thought I could ever cook. My first attempt before giving up was 2011. My son was 2yrs at the time. After cooking dinner, I called him to come and eat. When he got to the table and looked at it, he said, "Mom,it doesn't look righr", and wouldn't eat it. I knew ge qA right because I had tasted it as well and it didn't taste anything like what we had eaten at our Nigerian friends.But guess what? I did it all thanks to you. My Nigerian friends say its so good and can't believe I cooked it all by myself . I cooked 18 cups like you did and now my freezer is packed full and I don't see myself cooking again until end of January as its only my 11 year old son and myself. I am so proud of myself.     I like the way you generously added season cubes. I sometimes watch some cooking videos where the person cooking will add just one cube and I am sure they will add more with the camera away because I know for the quantity of food they are cooking one cube will not be enough but they dont want to add more cos of what people will say.       There's nothing wrong frying the tomato puree before adding the chopped shallots, it gives the puree more test that way so both ways work very well for me. Lovely video very well done and your voice was loud enough to hear what you are saying.👌

      YaGirl Malasia Have you visted all parts of Haiti to make that assumption? I can answer for you no. There are different ways to cook. You can go to Gonaives,Okap,Port au Prince, Port salut,delmas, Les cayes, Jacmel and various of other locations and you can see they cook different but the concept is there. My mom makes her legume very different

    Love this, I tried this with brown rice and less oil. It was still delicious.
    Brown rice has a different taste to everything but the flavours were fabulous.

      The difference between ghanaian jollof rice and Nigeria jollof rice is, Nigerians use to add butter to their jollof and is also Nigeria they have party jollof and original jollof anyway

    Sis. This is one of the best jollof vids. No one mentions that you have to fry till it is not tangy, no mention of reducing the stew till it thickens. This makes the difference between good jollof and just jollof. Thank you so much for sharing.

    Honestly this is one of the best jollof rice videos I have watched on CZcams. I love how it came out. Sometimes my only challenge is that the name of those recipes are not easy to get at all not even in the Market because when you call a name,the market women will get looking at you because they have never heard such n they don't have it.     It’s crazy how my grandma made “Red Rice” tomato based but sugar is added for taste. It’s similar to jollof rice. We (African American and African) have similar ways of cooking. Our history runs so deep.
