Stir-Fried Cabbage with Turmeric [Nyonya Cooking]

    Turmeric cabbage dish is a simple stir fry vegetable recipe which is often served in the South Indian cuisine. The addition of mustard seeds does not only add flavours but makes this golden yellow cabbage dish recognisable with the little black spots all over.
    Whenever I get my dose of Banana Leaf Rice or go to an Indian eatery, I will always get some vegetables to go along with curries and fritters. One of my favourite stir fry vegetable dish is the simple turmeric cabbage. By itself, cabbage does not have much flavours. Hence, cabbage absorbs the tasty flavours of spices cooked with it easily. Stir fried cabbage also blends well with the variety of curries and well spiced dishes.
    Turmeric cabbage recipe is so easy and fast that it is a suitable weekday recipe for after work or school.
    3 important tips for the best turmeric cabbage
    The recipe appears to be extremely easy but there are a few tips you need before cooking the dish. Read through it before cooking because the cooking process is so fast that you cannot go back to correct the steps when they are already done.
    Temper spices before using
    The process of tempering refers to the process of sautéing spices in oil over medium heat to release their flavours. In this recipe, turmeric powder, mustard seeds, dried chillies and curry leaves must be tempered at the beginning of the cooking process. The colour of the spices such as turmeric powder or dried chillies will change to show that they are ready to use. Mustard seeds on the other hand will start popping when they are being tempered. Be careful to not burn the spices or you will have to start all over again.
    Cook cabbage throughly with the spices
    Cabbage does not have much flavours and it easily absorbs the taste of the accompanying ingredients. Therefore, allow cabbage to simmer along with the spices until it is fully cooked. If the gravy dries up too quickly, the heat used may be too high. Carefully reduce heat and add hot water into pan to continue simmering the dish.
    Add salt shortly before serving
    The recipes calls for a number of spices. While the spices may contribute various flavours in this dish, salt is still need to enhance the taste of the dish. Add salt once the cabbage is ready to retain the moist. Also, the taste of salt will be more concentrated when added at the end compared to the beginning. That's great if you are watching your salt intake. Remember to stir well after adding salt before serving.

    Mustard seeds come first. Cause they have to splatter in the hot oil. Then the other ingredients. No black pepper u already have dried chilies. And ur dried chillies have to be pre cooked in a little oil till it's dark and set aside.

    If you following indian style. You must add the mustard seeds first. then Garlic. Then onion the followed by rest. There is a reason why Indian put Mustard seeds first in any cookings that requires mustard seeds. even in Fish curry.
