    I bought some fresh wood ear mushrooms at my Asian grocery and tried them for the fist time. They were so good. There were so many that I had to dehydrate the leftovers myself, and they shrunk way down! They rehydrate fairly quickly to their original form. I would say stalk up on these if you have a way to dehydrate and store them.

    Korean is not an intoned language.it’s pronounced “tahng soo yuk”, all even in stress. It’s actually the Korean used version of a Chinese dish/word, and when you talk about Chinese food in Korea, it’s one of the main dishes you would get.

      You could… Potato starch gives out crispier texture and corn starch gives out chewier and stickier texture

    Marion, I absolutely adore your recipes. But I have one question, if I’m not imposing; how come the pork does not become soggy when you add it in the sauce?
    Thanks for years of eating like an Emperor

      it will become soggy eventually which is why restaurants only mix the pork with the sauce when you order it
      if you want it to stay cripsy a little longer minimize the water in the sauce.

    Can you or others tell me the oil temperature I should be looking for? I’m not confident in the chopsticks bubbling.

      According to google at 320f bubbles begin frail line. At 350f bubbles good flow around chopstick. At 375f jacuzzi level. Maybe that helps you.

    Nice recipe but this is the southern sweet and sour pork which is popular in western Chinese restaurants . The Korean sweet and sour pork is the northern Chinese shandong tangsuyuk which is quite different from this:)

    Not sure about this recipe because of using bottled "Sweet and Sour Source"! I'm 100% positive they don't use bottles of sauce in Asian restaurants! Out of 10 I give this a 2!
