  • Ingredients and Measurements:
    For the dough:
    1/2 lb. flour (about 2 cups)
    1/4 tsp. salt
    2 oz. butter (1/2 stick butter- 4 tbsp)
    2 oz. Crisco (shortening)- 4 tbsp.
    ice water
    For the filling:
    2 cups shredded coconut
    3/4 cups sugar (more or less depending on taste preference)
    1 tsp. cardamom/elychee powder
    1/2 tsp. nutmeg powder
    1 tsp. ginger powder
    red coloring (optional)

    This is my testimony - I tried this as shown on your video and I was impressed with a capital "I". I also love coconut as well, and the island I grew up on there were two bakeries that made the best coconut rolls with a similar dough consistency. I made a few coconut rolls before based on other videos on CZcams and this was the first one that didn’t call for yeast or baking powder. Your technique taste very much like the stuff I ate growing up. As soon as I tasted it I got excited and sad all at once. Thanks for helping me to create nostalgic memories and happiness. I am so excited I found a receipt that taste very close to the coconut rolls I use to love as a child.

    Hi, I am from Trinidad , I now telling my husband I am dying for 2 big crunchie piece of coconut roll and a Cocoa Cola . I love cooking and baking so I say why pay $10. and I can make it ,I like mine without the coloring . I absolutely love this video , it looks sooooo delicious . Great Job 👍❤👍❤

    Omg. I tried this recipe. 1/2 anyways and it was perfect. I omitted the food colouring even though I know its tradition...but the flaky goodness. Thank you. So simple to follow too. Great tips and tricks!

    Hi I tried your coconut roll crust yesterday evening and it came out superb! I like how u simplify and present an adjustable recipe and explain in detail. I used half cup of sugar ideal for my taste. I also broke up the dough into four portions and opened them out very thin placing them on top of each other, kinda like a patatha. It was perfect. I salute u and thanks for sharing this recipe.

    I tried brushing the pastry with milk, and it was disastrous..it was not flaky and it was very hard on top.

    I am from the islands and this is not how folks taught us how to make coconut slice and kneading flour it’s a no. Not even a little bit of water to boil in the ingredients and sugar with the coconut? Plus the flour needs to be knead in properly and a little softer so you won’t need to fix the edges when preparing it for the ingredients. That’s not the way

      In the beginning of the video he said he's doing his "twist" on the classic recipe. He said instead of the original bread like dough, he's going to do a flaky pastry instead.
