    How to make chicken pulao:
    Preparation time: 20 minutes

    Ingredients:
    3 large onions, sliced
    Whole spices: 1 black cardamom, 4 green cardamom, 1 bay leaf, 1 cinnamon stick, 1 star anise, 5 cloves, 15 black peppercorns
    2 tbsp ginger garlic paste
    3 large tomatoes, sliced
    1 tbsp salt
    1 tbsp chili powder
    1 tsp chili flakes
    1 tsp turmeric powder
    1 tbsp coriander powder
    1 tsp black cumin seeds
    800 grams chicken, curry cut
    1 cup water
    4-5 green chilies, slit
    1 cup chopped coriander leaves
    1 tsp garam masala powder
    3 cups water (for cooking rice)
    2 cups (500 grams) soaked basmati rice
    Chopped green chilies, for garnish
    Fried onions, for garnish
    Chopped coriander leaves, for garnish
    1 tbsp desi ghee
    Instructions:
    Heat oil in a large pan over medium heat. Add the sliced onions and whole spices. Fry until the onions are light brown, about 10 to 12 minutes. Remove some fried onions for garnish and set aside.
    Add ginger garlic paste to the pan and fry for another 2 minutes on medium heat.
    Add the sliced tomatoes, cover, and cook for 5 minutes until they soften.
    Stir in the salt, chili powder, chili flakes, turmeric powder, coriander powder, and black cumin seeds. Cook for an additional 5 minutes on medium heat. Add a splash of water if needed to prevent the spices from burning.
    Add the chicken pieces to the pan and fry for 8 minutes over high heat, stirring occasionally.
    Pour in 1 cup of water, add the slit green chilies, chopped coriander leaves, and garam masala powder. Mix well, cover the pan, and simmer for 20 minutes over low heat.
    After 20 minutes, uncover the pan and add 3 cups of water. Bring to a boil, then add the soaked basmati rice. Mix gently and cook for 10 minutes over high heat until most of the water has been absorbed.
    Sprinkle chopped green chilies, red chilies (if using), fried onions, and coriander leaves over the rice. Drizzle desi ghee on top. Cover and cook for an additional 15 minutes over low heat.
    Once done, uncover the pan, gently mix the pulao, and serve hot.
