  • Recipe Tuscan stewed rabbit, revisited in a light key by Exquisite and Light. The rabbit is cooked in a pan with many aromas, the addition of tomato paste and black olives that make it appetizing even to the eye. The Tuscans are very fond of tomatoes, so we find it in many of their recipes for both meat and fish. This is a very tasty main course of meat and will appeal to the whole family.     INGREDIENTS for 4 servings:
    1 whole rabbit of 1 kg. about
    6 cloves of garlic
    abundant fresh rosemary
    a nice pinch of ground black pepper
    half an onion (180 g.)
    5 bay leaves
    6 teaspoons of extra virgin olive oil
    200 ml. of red wine
    700 ml. of hot water
    60 g. of tomato paste
    Salt to taste.
    140 g. of black Taggiasca olives
